Okra and Kohlrabi Vegan Breakfast Hash

This delicious vegan breakfast hash is totally prepared in the oven. This meal, which includes kohlrabi and okra, is flavorful, filling, and makes the ideal morning bowl. Pair with warm grain dishes or some fruit. The finished food might also include nuts for protein.

Ingredients

  1. aluminum foil
  2. cooking spray
  3. 1 kohlrabi bulb, peeled and diced
  4. ½ onion, sliced
  5. ½ teaspoon paprika
  6. ½ teaspoon garlic powder
  7. 2 tablespoons olive oil, divided
  8. 1 pound frozen okra, thawed
  9. 4 tablespoons cornmeal
  10. 1 teaspoon salt
  11. 1 teaspoon ground black pepper
  12. ¼ cup sunflower seeds (Optional)

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  2. Combine kohlrabi, onion, paprika, and garlic powder in a bowl; mix well. Drizzle with 1 tablespoon olive oil and stir to combine.
  3. Place okra into a separate bowl and drizzle with remaining 1 tablespoon olive oil; mix well. Toss in cornmeal, salt, and pepper.
  4. Spread okra mixture onto on one half of the prepared baking sheet and kohlrabi-onion mixture onto the other half.
  5. Bake in the preheated oven for 25 minutes. Stir okra and kohlrabi mixtures, keeping them on separate sides of the baking sheet. Bake until okra is crispy and kohlrabi is brown and tender, 20 to 25 minutes longer. Remove from oven and mix okra and kohlrabi together. Mix in sunflower seeds.
  6. You can also use 1/4 cup of cashew or pine nuts instead of the sunflower seeds. Or, use a combination.

If you actually dice the kohlrabi it will overcook, so a medium chop would be better. Also, it doesn’t say it but I would slice the okra as well. I found this to be dry so maybe an egg on top.

I added small chopped yellow potatoes, dried cranberries just egg, and organic vegan pre-roasted packaged chestnuts that I broke up. it was just delicious!
