Ingredients
- 3 cups shredded potato
- ¼ cup grated onion
- 2 large eggs, beaten
- 6 saltine crackers, or as needed, crushed
- ½ teaspoon salt, or more to taste
- ¼ teaspoon ground black pepper
- ½ cup vegetable oil, or as needed
Instructions
- Mix potato, onion, eggs, crushed crackers, salt, and pepper together in a large bowl.
- Heat 1/4 inch oil in a heavy skillet over medium-high heat.
- Drop spoonfuls of the potato mixture, first pressing potato mixture against the side of the bowl to remove excess liquid, into the hot oil; slightly flatten the latkes into the oil with the back of your spoon so they are an even thickness.
- Cook in batches in the hot oil until browned and crisp, 3 to 5 minutes per side. Drain latkes on a paper towel-line plate.

This recipe is my first experience with latkes and I absolutely loved their delicious simplicity. I’ve made them twice now. The only variation I did from the recipe is dabbing up excessive moisture from the potatoes with paper towels, but even so it requires squeezing off excess fluid with a spoon.
They came out perfect. I substituted panko bread crumbs for the crackers.

Super easy recipe to follow. I didn’t have saltines on hand so I went with some panko breadcrumbs. I used and icecream scoop to have uniform size. I grated the small onion and also used some dry onion powder, garlic powder along with the salt and pepper. Pressed them down so they were nice and flat and fried away. Had exactly 10 perfect latkes with great flavor.
I made the recipe as is except that I used a big boiled Idaho potato leftover that I shredded. I must say that it was a good recipe to use up the potato. I do not think I would make any changes to the recipe.
This is a very good recipe. Watching the video helped because of the info about draining the potatoes and keeping them from going brown. I did the recipe exactly as described and it turned out great (and golden delicious). I’m a latke newbie, so staying organized was a bit of a challenge, but it all worked out. I used Canola oil because I always do when vegetable oil is called for. I upped the servings quantity to 6, so I used my food processor to do the shredding which was a life-saver. Loved the recipe – thanks!
Really good recipe, (first time ever making them) they were so good. Had no idea they would jive with applesauce so well. Will definitely be making more of these in the future. Gonna be adding things (like maybe bacon)next time just to make these my own.

this is a great recipe i’m not that much into sour cream or applesauce but i had them with mayo and mustard mixed together 2parts mayo 1parts mustard is really good with fried potatoes as a dip. this recipe is so good these are great with salt alone. really easy and good.
I only had two cups of frozen hash browns, so I added in a cup of cheese. No onions, but garlic powder instead. Worked perfectly! No moisture issues, and I didn’t squeeze it.

These were delicious. I loved using the crushed saltines instead of using flour it was so much easier to distribute through the potatoes and they seasoned the mixture nicely. Everyone loved them..I’ll definitely make these again.
Fast and easy using refrigerated pre-shredded potatoes and instant minced onion for the first night of Chanukah. I also substituted crushed Ritz crackers. I will make them again for Passover using matzo meal.
