Ingredients
- 1 delicata squash, halved lengthwise and seeded
- ½ cup vegetable broth
- 1 pinch salt to taste
- 1 lime, juiced
- 1 teaspoon white sugar
- 1 tablespoon Sriracha sauce
- ½ teaspoon sesame oil
- ¼ teaspoon fish sauce
Instructions
- Place delicata squash halves, cut-sides down, in a microwave-safe bowl. Pour in vegetable broth, season with salt, and cover with a lid.
- Cook in the microwave until squash is easily pierced with a knife, about 8 minutes. Uncover carefully and drain broth. Flip squash and let cool for 5 minutes before cutting into smaller pieces.
- Whisk lime juice, sugar, Sriracha sauce, sesame oil, and fish sauce in a small bowl until sugar is dissolved. Pour dressing over squash.
