This rich pudding pie makes use of the well-known pairing of peanut butter and banana. This dish has “crowd favorite” written all over it—a delectable fusion of banana pudding and peanut butter pie. The filling would overflow a conventional pie dish, so be careful to note that the recipe asks for a deep-dish pie plate. Wafer crumbs and banana slices can be used as desired as a garnish.

Ingredients

  1. 6 large sweet potatoes
  2. 4 cups packed brown sugar
  3. 2 cups butter
  4. 1 cup pure maple syrup
  5. ¼ cup pure vanilla extract
  6. 1 teaspoon salt

Instructions

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Peel sweet potatoes once they are cool enough to handle. Slice sweet potatoes into 1-inch thick rounds; arrange in a 9×13-inch casserole dish.
  3. Mix brown sugar, butter, maple syrup, vanilla extract, and salt together in a saucepan; bring to a boil, stirring often, until sugar has dissolved and butter has melted, 5 to 10 minutes. Pour sauce over sliced sweet potatoes.
  4. Bake in the preheated oven until heated through and sauce has slightly reduced, about 1 hour. Serve hot.

My family loved this recipe, although it was still on the sweet side even after halving the sauce ingredients. But definitely a keeper, and the vanilla added a refreshingly different flavor to this classic Thanksgiving dish.

Make no mistake, this is a sweet, sweet potatoes dish but I thought it was wonderful. I’m even thinking of mashing them up with some of the syrup and topping with a huge dollop of whipped cream for a dessert. Thanks for sharing!
