Maple-Roasted Brussels Sprouts with Apples and Cranberries

While on vacation in South Africa, we also tried this dish. Everywhere serves it, but it’s not always simple to locate a nice version of it. In South Africa, Peri Peri powder is used in place of cayenne pepper. If the dish isn’t hot enough, it falls flat for me.

Ingredients

  1. 1 pound Brussels sprouts
  2. 1 large Granny Smith apple – peeled, cored, and diced
  3. ¼ cup olive oil
  4. 2 tablespoons maple syrup
  5. 1 tablespoon balsamic vinegar
  6. salt and ground black pepper to taste
  7. ¼ cup dried cranberries, or more to taste
  8. ¼ cup roasted salted walnuts

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Combine Brussels sprouts and apple in a large bowl. Whisk together olive oil, maple syrup, and balsamic vinegar in a small bowl and pour over Brussels sprouts-apple mixture. Toss until well combined and distribute in one layer on a baking sheet. Season with salt and pepper.
  3. Roast in the preheated oven until Brussels sprouts are tender and browned, 10 to 15 minutes, turning them after about 6 minutes. Toss with cranberries and walnuts.

Easy to prepare with ingredients I normally have on hand. I used frozen Brussels Sprouts that I defrosted and drained off any excess moisture. Beautiful balance of flavors. Everyone loved it.

Sooo good! Everyone loved it and my niece asked to take the leftovers home. I sliced my sprouts lengthwise before tossing them with apples and the balsamic/maple/olive oil dressing, then placed them cut side down on cookie sheet. Saved a tablespoon of marinade to toss the walnuts and cranberries before adding to the cooked sprouts and apples. Will make again!

I was not sure about this dish because Brussels sprouts are not my favourite, but was I glad I tried it! I followed the recipe but substituted pecans for the walnuts, and it was so good. I will definitely be making this again. #Allrecipesallstarscanada #CleanEats

Pretty good. Used pecans rather than walnuts by preference. The color combination makes a nice presentation, especially for the Christmas dinner table. I found it needed some salt. I liked the combination of ingredients and would use this recipe again.
