Ingredients
- 1 cup white sugar
- ½ cup buttermilk
- ½ cup butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions
- Combine sugar, buttermilk, and butter in a large saucepan over medium heat; cook and stir until melted and smooth, about 4 minutes. Stir in vanilla extract. Add baking soda and stir until syrup is frothy and doubles or triples in volume, about 1 minute.

This syrup is SO good! We were having a little syrup emergency here and I whipped some of this up to go with some pancakes. I also didn’t have buttermilk but added a little lemon juice to the milk and allowed to sit for about 10 mins. So delicious and honestly better tasting than the corn syrupy store bought stuff. So glad I found this recipe, it’s going to be our go to from now on. Makes an almost pint mason jar. Storing in the fridge with a lid on and will heat up to re-use. Thanks again charmingsgirl!
Excellent syrup! Everyone loves it. Was surprised at how much it grew in the pot. I didn’t read all the directions until I noticed it was “growing” and thought I did something wrong. Was able to transfer to bigger pot just in time. Favorite syrup now to be sure! Thank you!

Delicious! The only sad part is that it tasted too much like baking soda. I did not have buttermilk on hand so I put almost 2 tablespoons of distilled white vinegar in 1/2 cup of regular milk and let it sit for a while. It made a great substitute, but when I added the baking soda it foamed up right away (like 10 seconds) so I didn’t need to cook it long until it foamed up. I would suggest using less baking soda. The soda flavor just came through too strong for my taste.

I absolutely love this syrup, definitely one of my favorite for pancakes. The only thing I would suggest is cutting down on the baking soda a little, it foams less but doesn’t have as much of that baking soda taste

I don’t plan on ever buying pancake syrup again! This is a wonderful recipe.
This is a basic favorite recipe I’ve been using for years. My family loves this stuff on French toast or German pancakes. Once you’ve had this it’s hard to go back to the store-bought junk! I never have buttermilk on hand- I just add a teaspoon of lemon juice to regular whole milk, let it sit 15 minutes, and it curdles to make a great buttermilk substitute 🙂
1.14.17 Whoa, mega SWEET, but mega TASTY, too! I typically don’t like very sweet foods these days, but I must say that this syrup was delicious. Served over Sweet Potato Waffles (on this site) for a lazy Saturday morning breakfast.
