Ingredients

  1. 6 slices turkey bacon, or more to taste
  2. 1 large head cauliflower, cut into florets
  3. ½ cup sour cream
  4. ½ cup mayonnaise
  5. 1 clove garlic, minced
  6. ½ teaspoon salt
  7. ¼ teaspoon ground black pepper
  8. 2 cups shredded Colby-Monterey Jack cheese, divided
  9. 1 (8 ounce) package baby bella mushrooms, roughly chopped
  10. 6 tablespoons chopped fresh chives, divided

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C). Grease a 9×13-inch baking dish.
  2. Place turkey bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and crumble.
  3. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 15 to 20 minutes.
  4. Combine sour cream, mayonnaise, garlic, salt, and black pepper in a large bowl; add cauliflower, 1/2 of the bacon, 1 cup Colby-Monterey Jack cheese, mushrooms, and 3 tablespoons chives and mix well. Transfer mixture to the prepared baking dish and top with remaining bacon and cheese.
  5. Bake in the preheated oven until bubbling and cheese is melted, about 20 minutes. Sprinkle remaining chives over casserole.

I followed mrs kosmos‘ edits except I didn’t use shallots or chives and it was great. I probably should have got a bigger head of cauliflower since the cheese was a lot for the size I bought (didn’t know too much cheese was even possible). 100% will make again.

Rather easy to make. I roaster my cauliflower. And added crushed red pepper flakes for added flavor.

We loved this casserole! I have two tweaks to suggest: 1) steam the cauliflower for no more than 10 minutes unless you like mushy vegetables; 2) add a tablespoon or so of creamy horseradish to the mixture of mayo and sour cream. The horseradish provides a little bit of “oomph” and keeps the dish from being too bland.

My family loved this recipe. I used Sharp Cheddar, regular bacon, left out the mushrooms and chives. I also took the advice on here and roasted the cauliflower instead of steaming. I didn’t have a extra large cauliflower head, so it barely covered the bottom of the 9 x 13 pan. This one is a keeper! Thank you.

Used a bag of frozen cauliflower florets, cooked in micro and drained really well. Used Hormel pre-cooked real bacon (not turkey bacon); omitted the mushrooms. The pre-cooked bacon and frozen cauli saved a ton of time and it tasted great (altho I agree the real deal would most likely put this to shame)! We’ll def make this again. Thanks!

Simple and quick. I added a cup of canned chickpeas for a little more protein. Other than that I made the recipe as is. Great as a side dish or a weekday main dish. Full of flavor! I will definitely be making this again.

I’m sure it would be delicious exactly as the recipe was, but I was using up some “almost spent ingredients”… I substituted Trader Joe’s spinach and kale dip(yogurt based) for the Mayo and sour cream, no mushroom so I added the tail end of a bag of mixed veggies instead, and stuck some leftover chicken meatballs into the mix… it was amazing and became a complete meal for me ??

I made this with non-dairy cheese and sour cream, and since I didn’t have chives on hand, I put peas in it to have something green. Absolutely delicious!

Delicious! I used green onion, didn’t have chives on hand. Went with regular bacon (bits). Steamed the cauliflower in the microwave to speed things up. Oh, and I used sharp white cheddar and put cracker crumbs on top. Give this recipe a try it is good!! Always looking for ways to get my kids to eat their veggies!

1 minute on low steam in instant pot to steam cauliflower. tried 3 minutes on high pressure and had to go back to the store! LOL the cauliflower mush will be saved for soup. next time I may try 0 minutes at pressure since the casserole cooks in the oven

Added some chicken to make it more filling and some jalapeños to spice it up a little more. Left out the mushrooms and served with a salad and steamed asparagus. Yum!
