On a chilly Saturday night, I came up with the idea for this Buffalo chicken and baked potato dish. I also had a craving for Buffalo chicken and baked potatoes. I therefore mixed the two. The entire family adores it! Fantastic for a game day party or any chilly day!

Ingredients
- 1 ½ cups water
- ⅔ cup uncooked brown rice
- ½ pound ground turkey
- ½ cup chopped green bell pepper
- ⅓ cup chopped onion
- ½ teaspoon minced garlic
- ½ teaspoon garlic powder
- ½ teaspoon dried celery flakes
- 1 teaspoon Cajun seasoning
- ¼ teaspoon ground black pepper
- ⅓ cup water
- 1 pinch salt, or to taste
Instructions
- Bring 1 1/2 cup of water to a boil in a saucepan, and stir in the brown rice. Reduce the heat to a simmer, cover, and simmer until the rice is tender and the liquid has been absorbed, 40 to 50 minutes. Set the rice aside.
- Place ground turkey into a skillet over medium heat, and cook and stir the turkey until the meat gives up some of its fat, 2 to 3 minutes; stir in green bell pepper, onion, and minced garlic. Cook and stir until the turkey is crumbly and no longer pink and the vegetables are tender, 5 to 8 more minutes. Drain excess grease, if necessary. Stir in the cooked brown rice, garlic powder, celery flakes, Cajun seasoning, black pepper, and 1/3 cup water.
- Bring the mixture to a simmer, and cook until the liquid is absorbed, about 10 minutes. Season to taste with salt and additional black pepper, if desired.

I did not have a green pepper so had to omit. This rice was delicious anyway. Served as my rice in Red Beans and Rice Recipe. Great dish.
Excellent main/side dish. I made a few changes. I used turkey sausage. Instead of using the Creole season, I used a combination of sage and hot sausage. I added roasted garlic to the mix. What a great dish!!!
Very good but it’s not six servings. Two at the most.
I didn’t use turkey, added more seasonings and whala it cameout great!
The only change I made was to add some hot sauce because I thought it needed a little kick. It was a quick and easy dish to make and I will probably make it again.

This was delicious and quick. I followed the recipe as written with the exception of using a chopped celery rib as a replacement for the celery flakes, because that is what I had and I like to cook with as many fresh vegetables as possible.
I would have given 5 stars, but I made several changes. The base recipe was great. I sauteed bell pepper, celery and onion in butter. Next I added minced garlic. I cooked my rice in chicken broth instead of water. Instead of using ground turkey, I used turkey sausage. I wanted this spicy, so I seasoned with cayenne pepper and gumbo file and regular seasonings I had on hand.
Tripled the recipe, used ground beef instead of turkey, celery instead of celery salt, and added canned diced tomatoes.

Made it for dinner last night and other than adding a can of fire roasted garlic tomatoes, no changes. It was sooooo good my husband wants the leftovers tonight! Serving it with cornbread from, naturally, allrecipes.com!
I used boudin for the meat and garlic salt. Everyone loved it!! Will DEFINITELY be making it again!!????
I probably would double the cajun if I made this again. I couldn’t taste much of an of the seasonings.
Add corn, black beans, chili powder, turmeric, paprika and red chili flakes. Double the cajan seasoning. Use red and green bell peppers. Add vegan andouille sausage. It will probably need more salt.
Really good and easy. I served it as a main dish with salad. Nice Sunday Dinner.

Used full package of turkey and added crushed red pepper…very yummy!
I like this easy recipe for Dirty Rice because it’s low fat, and made with brown rice. I use significantly more cajun seasoning, which I make myself so that I can control the salt and the heat. This makes a regular appearance in our dinner rotation. I always make a double recipe for left overs, use fresh celery, and cook the rice in chicken broth. I serve it with a side vegetable and crusty bread.

Totally delicious ! I don’t care for rice much but this was Very tasty. I did add extra spices but it was yummy!
Dont know what I was thinking…thought the recipe called for a can of tomatoes. Glad I goof. It turned out really nice. Next time, and YES there will be a next time I will add a tbsp of chicken soup base to the meat mixture and a little more water.
