Jenny’s Seasoned Croutons

These seasoned, buttery croutons are given a fresh, nutty flavor by a seedy multigrain bread. On top of a cold, fresh salad, these are excellent served warm.

Ingredients

  1. ½ loaf multigrain bread, cubed
  2. ¼ cup butter, melted
  3. 2 tablespoons Cajun seasoning (such as Emeril’s Essence®), divided
  4. 2 tablespoons grated Parmesan cheese, divided
  5. 1 tablespoon onion powder, divided

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  2. Place bread cubes in a large bowl; drizzle butter over cubes. Toss to evenly coat. Sprinkle half the Cajun seasoning, half the Parmesan cheese, and half the onion powder over cubes; toss to coat. Spread coated bread cubes onto the prepared baking sheet; sprinkle remaining Cajun seasoning, Parmesan cheese, and onion powder onto cubes.
  3. Bake in the preheated oven for 7 minutes; stir and continue baking until crisp, about 8 more minutes.

Excellent. I used Cajun seasoning with fairly strong heat, and thought it might be a bit much for some guests. However, the heat tamed down a bit since made the day before serving. Added to a Caesar salad.

These are really tasty with just a bit of a kick. I baked them for about 15 minutes total, then turn off the oven and just let them sit in the oven to fully dry out without over browning.
