Mashed potatoes with a fresh touch. I frequently sprinkle on a little onion and garlic powder. Prior to baking, I also taste test them to determine whether they require more salt. Cream cheese, sour cream, chives, butter, and paprika are blended with potatoes to make a delicious dish.

Ingredients

  1. 8 potatoes, peeled and cubed
  2. 1 (8 ounce) package cream cheese
  3. 1 (8 ounce) container sour cream
  4. ½ cup butter
  5. ½ teaspoon salt
  6. ¼ cup chopped fresh chives
  7. 1 pinch paprika, or more to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place potatoes in a large pot of water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain.
  3. Combine hot potatoes, cream cheese, sour cream, butter, and salt together in a large bowl. Mash until creamy.
  4. Spoon potato mixture into a 2-quart casserole dish. Sprinkle with chives and paprika.
  5. Bake in preheated oven until bubbling, about 30 minutes.

The basic recipe is really good but lends itself to creativity & unique alternative methods. I prefer cut the potatoes in to larger chunks, then boil just to when you can peirce them and they cling to the fork. I blend the sour cream and cream cheese (onion & chive variety), quarter 1/4 cup butter and add the butter to the potatoes while hot, then fold the cream cheese/sour cream into the potato chunks. I bake as directed but in the last 10 minutes cover the potatoes with grated Irish cheddar & a bit more chives. So delicious & hearty! We garnish with bacon bits.

My sister made this many years ago for Thanksgiving and it’s a staple ever since for the holidays. My grown kids always request “Aunt Karen’s mashed potatoes” We sprinkle parmesan cheese on top. It’s delicious.

My first time making a mashed potato-like dish! This casserole is delicious and extremely buttery, and it actually tastes just as good the next day. I used smoked paprika instead of regular and added a dash of garlic powder. Next time, I might halve the butter and perhaps bake for an extra 10 minutes.

I’ve made this several times, so good. My sons ask for it all the time. I accidentally peeled the potatoes first then boiled them once and i couldn’t tell the difference.

Made it for our office St. Patrick’s Day potluck and it was a HIT!!! I used 12 potatoes vs 8 and didn’t increase most of the other ingredients — except the sour cream for moisture. I mixed the chives throughout the potatoes and sprinkled some extra on top with the paprika. It was the only dish on table that was scraped clean!!

Absolutely positively delicious!!!!! Added some garlic powder and onion powder into the mashed potatoes together with the chives! The only thing I did was cut the butter and cream cheese in half! Everyone loved it! Thank you for this recipe!

this dish was amazing! it was very creamy and was about as easy as making any homemade mashed potatoes. the only difference I made was I topped it with about 2 cups of shredded cheese. but my family loves a lot of cheese. this would have been good with our without the shredded cheese.

i changed butter to coconut oil and salt to himalayian pink salt also i used nut milk it doesnt matter which kind but i used it instead or cow milk when making the mash potaotes first then i proceeded to follow the rest of the recipe in making the casserole. i made it for a small group and everyone enjoyed it. i did a very good job on it since i dont really cook. i live a lone and so i cook for 1..

Riced the potatoes after baking them first. Faster prep for the potatoes, no extra moisture from boiling. No need to whip potatoes when you rice them.

This is my first time making this dish and it came out so delicious… I didn’t change a thing, the only thing I didn’t do was mash the potatoes, I left them a little clumpy like a potato salad giving it texture. I wouldn’t change a thing
