This recipe, which mixes linguine with sauteed asparagus, bacon, and arugula, is a must-try. The dish’s distinctively bright flavor comes from fresh lemon juice. Both easy and tasty!

Ingredients
- 2 teaspoons seafood seasoning (such as Old Bay®), divided
- 4 ears corn, husks and silks removed
Instructions
- Combine 1 cup water and 1 teaspoon seafood seasoning in the inner pot of a multi-functional pressure cooker (such as Instant Pot®). Place a steamer rack trivet in the bottom of the pot. Arrange corn on top of the trivet, overlapping or stacking if needed, and sprinkle with remaining seasoning.
- Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 2 minutes. Allow 7 to 10 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Drain and serve.
- This recipe is written for 4 ears of corn, but you can cook from 1 to 12 cobs at the same time with the same instructions, depending on the size of your pressure cooker pot and how you arrange the corn.
Reviews
Made as directed, and the corn came out perfectly cooked. The seasoning was fine, but I still prefer it with nothing but maybe a little salt. Will use the instant pot again to cook corn.
