Ingredients

  1. 3 medium sweet potatoes, cut into 3/4 inch slices then cubed
  2. 2 tablespoons cornstarch
  3. ¼ cup maple syrup
  4. ¼ cup white sugar
  5. ¼ cup brown sugar
  6. 2 tablespoons margarine
  7. 1 cup water

Instructions

  1. Toss sweet potatoes with cornstarch in a resealable plastic bag until evenly coated.
  2. Place coated sweet potatoes into a multi-functional pressure cooker (such as Instant Pot). Add maple syrup, white sugar, brown sugar, and margarine. Pour in water and stir to combine. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure carefully using the quick-release method according to the manufacturer’s instructions, about 5 minutes. Unlock and remove the lid.

These were incredibly easy to throw together. They’re very sweet though so I added some salt, pepper and orange zest for extra flavor and balance. I also used butter instead of margarine. Went great with smoked turkey!

I only had white sweet potatoes and I used molasses instead of maple syrup because that is what I had on hand. It was very good. Some of my potatoes got “mashed” while others were chunky but that’s my fault for not making them the same size. I did saute for about 5 minutes when done to thicken it a bit but, otherwise it was very good and fast! I will definitely be doing this again. Thanks for sharing the recipe.
