Ingredients
- 1 pound red new potatoes, quartered
- ¼ cup diced onion
- 2 tablespoons butter, melted
- 1 tablespoon honey
- 1 teaspoon dry mustard
- salt and ground black pepper to taste
- 8 sprigs fresh parsley
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9×13-inch baking pan.
- Spread potatoes in a single layer in the baking pan and top with onion. Stir together melted butter, honey, dry mustard, salt, black pepper in a bowl. Drizzle mixture over potatoes; toss to coat.
- Roast in the preheated oven, stirring halfway through, until tender, about 35 minutes. Garnish with parsley sprigs.

OMG are these addictive. I was taken aback at first, not accustomed to potatoes tasting sweet instead of savory, but quickly realized I love these little taters. The sweetness is very mild, so they are a nice surprise for the taste buds . I will be making these frequently in the future. They are incredibly quick and easy to assemble, then just let the oven do the work.
WE LOVE THIS RECIPE! A favorite side to meals, we haven’t had anyone not LOVE them, all year round! We cut up the potatoes a bit more (easier for kids to eat) it’s so TASTY DELICIOUS but not “spicy” so everyone loves it yum!
This dish was quite good. Just the perfect amount of tang and sweet.
I prepared this in the air-fryer, cooking the potatoes for 20 minutes, adding the onions for the last 5 minutes (or else they’d have burnt). Really good. Will make it again.
Took a bit longer to cook than noted, but really good. I added some chopped garlic to mine for added flavor. Went great with honey mustard chicken and pan seared green beans.
