Honey Garlic Carrots

These honey-garlic carrots are absolutely amazing!

Ingredients

  1. 1 tablespoon butter
  2. 2 (16 ounce) packages baby carrots
  3. 3 tablespoons honey
  4. 2 cloves garlic, minced
  5. 1 teaspoon salt
  6. ½ teaspoon black pepper
  7. ⅓ cup water

Instructions

  1. Melt butter in a large skillet over medium heat. Stir in carrots, honey, garlic, salt, and pepper. Pour in water, cover, and bring to a boil. Cook for 4 minutes.
  2. Remove the lid and continue to cook, stirring often, until carrots are tender, 10 to 15 minutes.

I’ve made this twice — once following the recipe, and once cutting the carrots into thirds (they seemed to get a bit softer this way, but not mushy) and adding about 1tsp of ginger paste with the garlic. I preferred the taste of the second, but didn’t really taste the ginger as a separate flavor, though I do think it deepened the flavor of the carrots a bit.

My husband loves when I make this. I use a little more honey than it says. Definitely saute in the water longer than just 10-15 minutes, to make carrots softer.

This recipe is delicious! The only thing I did differently was steaming the carrots(which eliminated the need for the water) before adding the glaze.

Cut recipe in half for just two people, used ingredients as suggested. I did keep the carrots covered to simmer longer on the stove top about 8 to 10 minutes instead of the 4 minutes in the recipe. Simple, sweet and delicious. Was perfect with a chicken breast. Thanks for the recipe!

I also made this by baking, on parchment paper. I did have to turn over to prevent over browning on the bottom. Next time I may try closer to the actual recipe, but use steamed carrots.

this was awesome! Only I baked it without any water. I just sprayed a casserole dish and added a little butter along with all the other ingredients. Delicious!

Great side dish that very easy to throw together! I cut the recipe in half and saved on time by using a steam in bag of baby carrots. This eliminated the water and all I did was combine the rest of the ingredients and poured over the carrots, tossing them to coat.

As this recipe is, I don’t think it is for me. The honey and the sweetness of the carrots for me was very sweet. I added some Cajun seasoning to it to counter balance the sweetness and then I did like it
