It’s quick and simple to prepare this shrimp linguine dish for a dinner party, a romantic night, or just a quick family meal. Shrimp salad that’s already been cooked is excellent! For another delicious recipe, I occasionally swap prawns for chicken.

Ingredients
- 4 cups water
- ½ pound dry pinto beans, sorted and rinsed
- 2 small onions, quartered
- 2 cloves garlic, crushed
- 1 teaspoon ham base
- 1 teaspoon salt
Instructions
- Bring water to a boil in a medium pot; add pinto beans, onions, garlic, ham base, and salt. Stir and return to a boil. Cover, turn off heat, and let stand for 1 hour.
- Return to a boil; reduce heat and let simmer, uncovered, stirring occasionally, until beans are tender or have reached desired doneness, 40 to 50 minutes.
- For refried beans: Reserve 1/2 cup cooking liquid and either mash beans with a potato masher or process in a food processor until desired consistency, using reserved liquid to adjust as desired.

I often see the debate of whether to drain the water the beans are soaked in or not so I set out on an experiment this weekend. The other recipe I made was a slow cooker method so my experiment wasn’t about cooking time but rather taste, texture, and color. This recipe won on all three things. I did add ham but that was the only change I made. This difference in the color of this one was shocking. It also had more depth of flavor and very few beans split. I do recommend rinsing the beans in a colander beforehand.
