Ingredients

  1. 4 large potatoes, peeled and cubed
  2. 1 tablespoon olive oil
  3. 1 tablespoon minced garlic
  4. 1 tablespoon chopped fresh basil
  5. 1 tablespoon chopped fresh rosemary
  6. 1 tablespoon chopped fresh parsley
  7. ½ teaspoon red pepper flakes
  8. ½ teaspoon salt

Instructions

  1. Preheat the oven to 475 degrees F (245 degrees C).
  2. Place potatoes into a large bowl. Add oil, garlic, basil, rosemary, parsley, pepper flakes, and salt; toss until potatoes are evenly coated. Transfer to a rimmed baking sheet or roasting pan and spread in an even layer.
  3. Roast in the preheated oven, turning occasionally, until potatoes are browned on all sides, 20 to 30 minutes.

I used more olive oil and fresh basil than the recipe called for. I also left out the rosemary. I would make again. They went well with a rib eye steak on the grill.

Excellent! I used a bag of various colored baby potatoes, halved. I’d reduce the red pepper flakes because other family members complained it was too spicy.

I didn’t have fresh herbs so I used 1/2 tsp of each dried herb. Came out divine!! NO leftovers! I doubted the coating method but it worked perfectly!!
