When the blueberries are in season, I love to make this delicious salad once a year. Since blueberries are costly, I pretty much solely use them in this recipe. A salad with lovely colors! This salad is perfect for the Fourth of July.

Ingredients

  1. 3 cups shredded hash brown potatoes
  2. ⅓ cup butter, melted
  3. seasoning salt to taste
  4. 1 cup diced cooked ham
  5. 1 cup shredded Cheddar cheese
  6. ¼ cup chopped onion
  7. 2 large eggs
  8. ½ cup milk
  9. salt and pepper to taste

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Press hash brown potatoes onto the bottom and sides of a 9-inch pie dish. Drizzle with melted butter and sprinkle with seasoning salt.
  3. Bake in the preheated oven until potatoes begin to brown, about 20 minutes.
  4. Combine ham, cheese, and onion in a small bowl. Whisk together eggs, milk, salt, pepper, and a little seasoning salt in a separate bowl.
  5. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture.
  6. Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in the preheated oven until filling is puffed and golden brown, 20 to 25 minutes.
  7. You can bake this quiche and refrigerate it up to 2 days in advance, then reheat it in the microwave. It also freezes well.

quick and easy, usually have all ingredients on hand. needed just a little more pepper, otherwise it was delicious (I added just a little more ham and cheese and a third egg).

This recipe was kind of a magic moment in our household. I sold my 3 year old grand daughter (who already likes ham, eggs, and cheese but is fussy about textures) on it by having her “pat pat pat “ the hash browns in the pie pan and helping assemble the rest. My husband who avoids quiche at all costs felt obligated to try a bite. He then ate a whole piece with us at dinner and went back for seconds! Super recipe – just added an extra egg other than that I wouldn’t change a thing! Thanks!

Yes, quiet a few, I did the 2 cups instead of 3 hash Browns like it said, sautéed onions,green peppers,sausage,6 pieces of bacon,a few pieces of ham Kept the amount of cheese,added 1/4 cup of Parmesan,shredded cheese 6 eggs with 1/2 cup milk Followed all instructions but improvised a lot,to my liking. As you see we ate half just the 2 of us. It was absolutely the best quiche,there was no way 2 eggs ( I put 6 eggs) would be enough,we like meat it was like a 1/4 pd sausage. I may fry up hash Browns a little on top of stove, next time.but if I didn’t make the change I don’t think it would have been good, My husband loves meat, It was so good I will make again.

This dish always gets a 5 star rating! It’s super easy and so delicious! I substitute the ham with ground breakfast sausage. And I add in a little paprika to the hash browns!

It helps as some have said to fry the hashbrowns first with ~ 2 T butter or to use tater tots and then smash them into the pie pan. I also add my onions to the hashbrowns while frying to ensure they are fully cooked. The butter can be reduced afterwards when putting in the oven. If adding additional eggs it will take more time to bake. I like to use garlic salt instead of seasoned salt.

This is a great quiche, but was very disappointed that it took a whole hour in the oven, not including the 20 minutes for the hash brown “crust”. I don’t have issues with other recipes, so I know it’s not my oven.

Love it! I’ve made it several times and my family loves it. I sub half & half for the milk, which gives it a richer taste. I also use green onions for color and texture.

I thought this was a great recipe with opportunities to add so many different things! I think next time I make it I will just spray the potatoes with olive oil instead of using all that butter!

I made this today. It was delicious. It took 30 minutes for the “crust” to start browning. After I added the remaining ingredients, it took 40 minutes to the filling to set up. My husband is not a fan of quiche but he wanted a 2nd helping. I added 1/4 cup of chopped green pepper and 1/2 tsp of garlic powder.

Pan fried hash browns with onion. Then sprayed pie plate and lined it with potato/onion. Sprinkled salt and Mrs. Dash. Cubed ham on top, next grated cheese. Put a few sundried tomatoes and a little of their oil in. Mixed 4 eggs with milk, poured over all. Sprinkled italian seasoning. Turned out a little bland but edible. Next time try more seasonings.

Made this for Christmas morning because it’s easy. I added a bit of Gruyere cheese and the smallest pinch of nutmeg with salt and pepper. It was incredibly easy and very very delicious. I served with a side of fresh fruit salad and Greek yogurt. YUM!?

I gave this a 3 start because it really didn’t have enough eggs. It was mostly potatoes and the veggies I used instead of ham. I am not sure if using veggies vs. ham made the difference but just not a quiche in my opinion.

Made it last night with some dehydrated hash browns I had leftover from breakfast the previous day. It was OK, but, the question is, what’s the point. You can scramble a couple of eggs with ham, onion, and cheese, fry the hash browns as a side, and it’s done in less than 10 minutes.
