Green Beans with Maple-Dijon Vinaigrette

I recently entered this traditional family recipe in the Pudding Division of the Ventura County Fair and received a “Honorable Mention” for it. The judges adored Kugel even though there was no category for it and still wanted to give me a medal in recognition. Hope you also find it enjoyable.

Ingredients

  1. ⅓ cup olive oil
  2. 2 teaspoons red wine vinegar
  3. 2 teaspoons Dijon mustard
  4. 2 teaspoons maple syrup
  5. 1 pound fresh green beans, trimmed

Instructions

  1. Combine olive oil, red wine vinegar, Dijon mustard, and maple syrup in a bowl. Whisk until smooth.
  2. Place green beans into a pot and cover with salted water; bring to a boil and cook for no more than 3 minutes. Remove from heat and drain.
  3. Toss green beans in dressing mixture or serve with dressing on the side.

I made this recipe as stated and I really liked it. I served it as a side with dinner and my whole family enjoyed it. I was worried the maple syrup could make it too sweet, but it was perfect.

4.6.20 This is an interesting twist on fresh green beans, turned out better than I anticipated. I typically would expect something like this on carrots (and they’d be good with this vinaigrette, as well), but it really works on green beans. Steamed the cut green beans in the microwave for 2 minutes, so they were perfectly crisp tender with just a bit of sweetness from the maple syrup. Thanks for sharing your recipe Dave.
