Green Beans in Cider

I made this instead of the customary yet heavy green bean casserole for Thanksgiving dinner. It tastes wonderful and just a little bit sweet.

Ingredients

  1. 1 (16 ounce) package frozen green beans
  2. ½ cup apple cider
  3. ½ teaspoon olive oil
  4. 2 tablespoons real bacon bits
  5. ½ cup chopped onion
  6. salt and ground black pepper to taste

Instructions

  1. Combine green beans and cider in a microwave-safe bowl; cover with plastic wrap. Cook in microwave on high for 5 minutes; stir beans. Return to oven and cook until tender, 5 more minutes. Remove beans with a slotted spoon and transfer to a serving bowl; reserve cider.
  2. Heat olive oil in a small skillet over medium heat; cook and stir bacon bits and onion in the hot oil until onion is tender, 5 to 10 minutes. Pour cider from green beans into the skillet; simmer until liquid is reduced, 5 minutes.
  3. Spoon bacon mixture over green beans. Season with salt and black pepper.

These came out beautifully! I will be making these regularly. I added peppers, onions and bacon bits to the mix. I also added cheynne pepper to offset the sweet acidic taste I thought I was going to get.

I used Balsamic Vinegar & Brown sugar & didn’t use bacon. It turned out very tasty!

First, I had to change the recipe because I forgot to buy bacon. I had to substitute pepperoni for the bacon, which wasn’t awful, but the bacon would have been much better in my opinion. I thought the sauce was very nice, but would have been better with a touch of white wine or a splash of vinegar to balance the sweetness of the cider. I didn’t think it was too sweet though. I did not use the microwave to prepare this dish. I steamed fresh beans until tender and then added them to the onions and sauce. I’ll make this again with bacon!
