This roasted chicken recipe is so simple and delectable. according to taste. It goes well with spaghetti, but I served mine with rice pilaf.

Ingredients
- 3 heads garlic, minced
- 1 tablespoon olive oil
- salt and freshly ground pepper to taste
- 1 pound fresh green beans, trimmed
- 1 teaspoon butter
- ⅓ cup sliced almonds
- 1 tablespoon olive oil
- 1 pinch cayenne pepper, or more to taste
- 2 ounces crumbled blue cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil.
- Cut top 1/3 off garlic heads, exposing the cloves. Place garlic in the prepared baking dish cut side up. Pour olive oil over the garlic and season with salt. Fold up foil and seal to create a tight packet.
- Bake in the preheated oven until a paring knife inserts easily into the center of a garlic clove, about 1 hour; set aside to cool. Once cool, remove each garlic clove from the skin. Reserve remaining olive oil.
- Increase oven temperature to 400 degrees F (200 degrees C).
- Bring a large pot of salted water to a boil; add green beans and cook until bright green and nearly tender, 4 to 6 minutes. Drain beans and transfer to a large bowl of ice water to cool completely; drain well and set aside.
- Melt butter in a large skillet over medium heat. Add almonds; cook and stir until lightly browned, 3 to 4 minutes.
- Toss green beans, roasted garlic and reserved olive oil, toasted almonds, and 1 tablespoon olive oil together in a large bowl; season with cayenne pepper, salt, and black pepper. Transfer to a shallow baking dish and top with blue cheese.7
- Bake until cheese is melted and beans are fully tender, about 15 minutes.

I made it as described. Wonderful. The only thing was that I’m not the biggest fan of blue cheeze. Next time I’ll try a milder cheeze.

I hardly ever review recipes but this was outstanding!! Someone here suggested.. cutting the boiling time on the green beans, for a bit less than 1lb, I put fresh green beans in rolling boiling water for 2 minutes and immediately drained and put in ice water to stop the cooking process. I did not toss the almonds on the stove with the green beans. Once I took beans out of cold water I mixed it immediately with the roasted garlic, olive oil, whole almonds (that’s what I had on hand) and blue cheese. I put in oven for 15 minutes. The beans were so crisp and wonderful. My husband dislikes blue cheese and he loved this dish. My dad doesn’t really eat green beans and he said he could eat this everyday. I had leftovers and ate them for 3 days straight and even microwaving they still were perfectly crisp.
I thawed frozen green beans in warm water and set aside. Then I chopped the almonds and sauteed them with a little bit of bacon grease, the butter, and crushed garlic (per recommendation of other reviewers). And I didn’t have blue cheese, so I used 1/4 cup of feta instead. I didn’t measure the green beans but used enough for 4 people with a little bit of leftovers for lunch the next day. I did measure the crushed garlic and only used about 2tbsp but it was too powerful. I enjoyed it but next time I make this I will better think out the proper amount of garlic and maybe use blue cheese to see how that tastes.
I added about 4 shakes of Crushed Red Pepper and the next time I make it I will add a tablespoon to give it a real kick. I followed the recipe and it was ok but not amazing. Not sure I will make it again. I love garlic and this recipe is for garlic lovers!!
Delicious! The only thing I didn’t have in the fridge was blue cheese, so I substituted shredded parmesan and they were outstanding! I will be making these again for sure.

This dish was a hit at our New Year’s Dinner. I made it pretty much as it is written except that I had minced garlic on hand so I didn’t bake any garlic bulbs. Also I didn’t have any blue cheese so I substituted parmesan and we enjoyed it.

I absolutely loved it. It may be too intense for less refined palettes, but yummmm! It feels a much more elegant choice over a green bean casserole.
Really easy and quick! I added 1/2C-Bacon crumbled about 8 slices and used the bacon fat to cook the garlic. You can never go wrong with bacon!

I did roast the garlic, but used frozen green beans. This recipe is a keeper at our house. The combination of the garlic and blue cheese make for a tasety side dish.
I also did not take the time to roast the garlic. Sauteed with almonds. I doubled the recipe for Christmas dinner and everyone raved about it! It is the perfect combination of sweet and savory. This may become a new Christmas tradition!
