Green Bean Almondine

They appeared to attend every wedding, graduation, and burial when I was growing up in a small Michigan town with a sizable Polish community. You can’t stop at one—they’re a little bit sweet and tangy, just like potato chips!

Ingredients

  1. 1 ½ pounds fresh green beans, trimmed
  2. water
  3. 1 tablespoon butter
  4. 1 ½ tablespoons extra-virgin olive oil
  5. ½ cup raw slivered almonds
  6. salt to taste

Instructions

  1. Place green beans in a saucepan. Cover with water and bring to a boil. Cook until beans are al dente, about 5 minutes. Drain and set aside.
  2. Melt butter in a large skillet over low heat. Add olive oil and mix thoroughly. Add almond slivers, mix until coated, and spread out evenly in the bottom of the skillet. Stir continuously, until almonds just begin to turn golden brown. Remove almonds to a small bowl and continue stirring for 1 minute until cool enough to taste. Add salt.
  3. Pour almonds over green beans and toss to ensure even coating. Serve warm.
  4. Be careful not to scorch the almonds, or they’ll turn bitter and you’ll have to start over.
