Grandma’s Collard Greens

I have had my fair share of collard greens, but these are without a doubt the greatest I have ever had. When the collards in her garden were available in the summer, my grandmother used to cook this recipe. Guaranteed, you won’t like collard greens if you don’t like these. If you prefer your food spicy, add additional red pepper flakes.

Ingredients

  1. 2 cups chopped red onion
  2. 2 slices bacon, chopped
  3. 1 ¼ cups chicken stock
  4. ¼ cup apple cider vinegar
  5. 2 tablespoons brown sugar
  6. 1 pinch red pepper flakes
  7. 4 pounds collard greens – rinsed, trimmed and chopped
  8. salt and ground black pepper to taste

Instructions

  1. Cook onion and bacon in a large pot over medium-high heat until onions are soft, 5 to 7 minutes. Add chicken stock, vinegar, brown sugar, and pepper flakes and cook and stir until brown sugar has completely dissolved, 2 to 3 minutes.
  2. Add 1/2 of the collard greens, reduce heat to medium, and cook until greens are slightly wilted, about 10 minutes. Add remaining greens, toss to combine, and simmer over medium-low heat until tender, about 30 minutes. Season with salt and pepper.

I used Cayenne Pepper rather than red pepper flakes, about 1/2 tsp for 1 lb of greens. This was fabulous! Perfectly balanced flavors and relatives who don’t like green raved about the dish!! Best collard greens ever!! Seriously. This is the recipe to use for New Year’s Day.

Excellent! We had real bacon crumbles from Costco, so this was pretty easy. We only had white vinegar (boo, hiss). I’m sure it would have been even better with a little apple flavor blending in.

Been making my greens pretty much this way for years except I leave out the brown sugar as we do not like our greens sweet. Mostly I just throw all those ingredients together and give it a taste every now and then to make sure it’s right. My southern mother-in-law introduced me to greens and I love them…especially fixed this way!

My hubby made these for Thanksgiving. Cooked about 25 minutes. Greens were done enough, but he did actually add 4 extra oz. of chicken stock. Flavor was a little too sweet for our liking. Will use my Mother-in-law’s recipe next time.

These were pretty good! I had to add more liquid after about 20 mins of simmering, as the pot was getting pretty dry. Covering the pot would have probably helped with that, but the directions did not mention using a lid. I halved the recipe, however I do suggest doubling the bacon. Nice flavor from the vinegar and brown sugar. I had to cook the greens an extra 8-10 mins to get them tender to my liking.
