A bell pepper is filled with spinach, mushrooms, and lentils for a complete supper. You are allowed to use any color of bell pepper. Wraps are a terrific way to use the filling if your peppers are on the smaller side and you have extra.

Ingredients
- cooking spray
- 1 pound medium yellow-flesh potatoes, scrubbed and chopped into 1-inch cubes
- 1 pound red potatoes, scrubbed and chopped into 1-inch cubes
- 1 cup shredded mozzarella cheese
- ½ cup shredded Cheddar cheese
- ½ cup sour cream
- ½ cup mayonnaise
- 4 tablespoons salted butter, cut into small pieces
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a deep 9×13-inch baking dish with cooking spray.
- Place yellow and red potatoes into a large pot and cover with salted water; bring to a boil. Cook until soft, about 10 minutes. Drain.
- Combine mozzarella cheese, Cheddar cheese, sour cream, and mayonnaise in a large bowl; mix well. Slowly add potatoes and toss; use a wooden spoon or flat spatula to avoid mashing the potatoes.
- Pour potatoes into the prepared pan. Dot butter over the top and cover with foil.
- Bake in the preheated oven, 25 to 30 minutes. Remove from oven and uncover. Preheat the oven’s broiler. Return to the oven and broil until top is browned, about 5 minutes.
- You can also line the baking pan with parchment paper if desired. Use a deeper or larger pan if needed.

OK for high fat comfort food. I added some smokey heat with smoked paprika and red pepper flakes. I really would prefer a creamier dish with a mornay (cheese) sauce. It takes longer but well worth it. Butter on top just kind of floats there. (Added parsley flakes after baking.)

I doubled the recipe and totally missed the pary about putting the butter on top… I just used a whole stick softened and cut in lil squares before too too soft… And mixed in with everything else… Not too much butter pooled at the bottom for mine… I also added a couple other cheeses i had like a little left in the bags of… It was awesome… They were Really Good!!! Will def make again!!
Excellent was my husbands response when asked what he thought about these potatoes. As far as flavor goes, I agree with him and they were really good. What I didn’t like is that they were swimming in a pool of butter making them greasy.
