Ingredients

  1. 25 tomatoes, chopped
  2. 10 onions, cut into chunks
  3. 1 quart apple cider vinegar
  4. 6 green bell peppers, seeded and chopped
  5. 5 chile peppers, seeded and chopped
  6. 1 ½ cups white sugar

  8. 1 tablespoon salt
  9. 1 teaspoon ground allspice
  10. 1 teaspoon ground cinnamon
  11. 1 teaspoon ground cloves

Instructions

  1. Mix tomatoes, onions, apple cider vinegar, green bell peppers, seeded chopped chile peppers, sugar, unseeded chopped chile pepper, salt, allspice, cinnamon, and cloves together in a large mixing bowl.
  2. Ladle enough of the tomato mixture into the pitcher of a blender to fill to about 3/4-full; blend until smooth. Pour blended mixture into a large pot. Repeat blending until entire mixture has been pureed.
  3. Bring the mixture to a boil, reduce heat to medium-low, and simmer until thickened, 7 to 8 hours.

I scaled way back on this recipe but made as written. This was excellent! The only change I felt needed was the cloves. I will leave it out entirely the next time because I do not feel it was necessary. The bell kind of gets lost in the presentation but definitely not in the taste. Super good sauce and far superior to store bought!
