Reviews
Very simple recipe, but not enough ginger, as I used chopped ginger which seemed to ‘cook up’ as the rice cooked. Added another TBSP of the chopped ginger and it still seemed mild.
I made this for dinner last night and as far as flavor goes it was a hit. However, the recipe called for less water than the rice needed so it wasn’t cooked all the way. My suggestion is that if you make this, follow the cooking instructions on the rice and then follow these ones. If the rice is a 1:2 ratio, then add all of the ingredients and then the water the rice calls for. It tasted awesome even though it was crunchy. My family loved the flavor but they all said the same thing.
8.25.21 I must say I was concerned that the recipe didn’t have enough water and didn’t tell you to thoroughly rinse the rice prior to cooking. But no problem; it cooked up beautifully. Wasn’t quite done at 15 minutes, so I gave it a couple more minutes and was happy with the consistency of the rice. I did serve it with lime wedges, just forgot to put them in the photo, and that really complements the ginger flavor. The ginger is subtle, won’t overpower the rest of the meal. Thanks for sharing.
