Fried Mashed Potato Cakes

Ingredients

  1. 1 cup leftover mashed potatoes, cooled
  2. 1 large egg
  3. 2 ½ tablespoons all-purpose flour
  4. ¼ teaspoon salt
  5. 1 tablespoon vegetable oil, or as needed

Instructions

  1. Mix together mashed potatoes, egg, flour, and salt in a bowl until well combined.
  2. Heat a thin layer of vegetable oil in a frying pan over medium heat.
  3. Working in batches, drop 1/6 of the potato mixture into the hot frying pan and flatten into a patty. Repeat to add more patties to the pan. Cook until browned, about 3 minutes per side.

I subbed two tablespoons of King Aurther cup for cup gluten free flour. I fried them in coconut oil and bacon grease. They turned out delicious! GLUTEN FREE

I had leftover mashed potatoes and remembered my mom used to make these when I was growing up. This did give me 6 wonderful potato pancakes as stated. Be patient and take your time to spread these out in the pan and it takes a gentle hand and patience to work them out without tearing them up. I liked these straight from the pan as they had that little crispier texture on the edges. These are a soft pancake and do not get crispy at all, they just get that bit of fond and what little browning it does. This wasn’t full of flavor or fancy, but it used up my leftovers and repurposed them into something different, so leftovers didn’t feel like leftovers. I’d make this again, but I wouldn’t make mashed potatoes on purpose strictly with the intent of making this dish. It did what I wanted it to, and it was alright. This would be easy to customize and add in other ingredients such as garlic or onion or herbs.

These were fabulous! I doubled the recipe and added a few good pinches of fresh Parmesan. I served these with a couple runny eggs, so tasty and just the perfect way to use up those leftover mashed potatoes.

Like the recipe but had to add my own touch so I added chopped bell peppers and served them as a breakfast side, my family enjoyed them.

These came out so good! The only thing I changed was to cook them for five minutes each side over medium heat. The last 30 seconds or so a jacked up the temperature so if they would get crispier. They came out delicious. There were six perfect two-inch potato pancakes, I wish I had taken a picture!

Made exactly as recipe–fam and I loved them. I worked and retired at 67–8 years ago–and moved out west to be with daughter and family–so there were a lot of things I always intended to cook and didn’t, I noticed that there were a lot of LO mashed and thought–why not? so I doubled the recipe fired up my lodge cast iron frying pan (cause I remembered my mom making theses in her cast iron frying pan) and they turned out delicious. P>S> I have always feared my cast iron as it generally needed a good amount of heat–after making these–I will try some other things that I feared–chicken cutlets anyone?

My leftover mashed potatoes didn’t need extra salt bc I already use cream cheese, butter and a ranch seasoning packet in them. However, it made this recipe even more yummy!

Wonderful. Seen where ppl add bacon bits. I used garlic salt and instant potatoes. I added finely diced onion and parsley. Might try cilantro next time, I think this would benefit from a topping sauce but open to suggestions on that.

It was really good, but mine ended up really crispy and dense, so the next batch I made I added a little bit of milk, and I like it better because the milk made it a lot lighter
