Fried Beets

I’ve never heard of anyone making beets quite this manner, but my mum loved them! Definitely not a health food, but it’s delicious! Cook them till they’re charred, according to mother. She was accurate. If they appear to need it, you might also need to add a little bit more butter or margarine.

Ingredients

  1. 6 large red beets
  2. ¼ cup butter
  3. salt and ground black pepper to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add beets and cook uncovered until slightly tender, about 20 minutes. Drain, rinse, and cut ends from each beet.
  2. Place beets in a saucepan with about 2 inches of water. Cover saucepan and bring water to a boil; cook beets until tender, about 20 minutes. Remove beets from water and immediately immerse in a bowl of ice water to cool. Pull peels off the beets. Slice beets into 1/4-inch-thick slices.
  3. Heat butter in a large skillet over medium-high heat; fry beets, flipping occasionally, until lightly blackened, about 20 minutes. Season beets with salt and pepper.
  4. Margarine can be substituted for the butter.

Had these all the time growing up. Recipe is good. You can use canned sliced beets as well and have great results.

I love beets, so “fried beets” definitely caught my attention…. As I read the directions, and it encouraged “burning”, I immediately thought, this process caramelises the sugar! I haven’t tried this recipe, only because it’s too late after supper…. But you can be sure it’ll be on my menu for tomorrow…. this sounds delish…. After I make them, I’ll add a pic…. Salted, carameled beets?? Whats not to love about that
