Fresh beets, carrots, and onion are combined with an old-fashioned favorite in a tangy, sweet marinade. extremely fast and simple to construct. Beets leave stains! Don’t forget to don an apron!

Ingredients

  1. 6 beets, stems removed
  2. 4 large carrots, cut diagonally into 1 1/2-inch slices
  3. 1 large onion, cut in half and thinly sliced
  4. 1 ½ cups cider vinegar
  5. ⅔ cup sugar
  6. 2 teaspoons ground ginger
  7. 2 teaspoons orange zest
  8. 2 teaspoons dried dill
  9. 1 ½ teaspoons sea salt
  10. 1 teaspoon garlic powder
  11. 1 teaspoon dry mustard
  12. ¼ teaspoon freshly ground black pepper
  13. ⅓ cup olive oil

Instructions

  1. Place whole beets in a pot and cover with water. Bring water to a boil, cover the pot, reduce heat to medium-low, and cook until beets are tender, about 30 minutes.
  2. Place carrots in a microwave-safe dish and cook on high until firm but tender, about 6 minutes. Place carrots in a colander under cold water to stop the cooking process, 3 to 5 minutes. Remove peels and discard; cut beets into thin slices.
  3. Whisk cider vinegar, sugar, ginger, orange zest, dill, sea salt, garlic powder, mustard, and black pepper together in a microwave-safe bowl until sugar and salt dissolve. Whisk oil into cider dressing mixture. Microwave dressing on high for 2 minutes; whisk again.
  4. Combine beets, carrots, and onions together in a large container; pour dressing on top and mix well. Cover the container and refrigerate for at least 24 hours before serving.

This makes a lot (2 quart size jars), so a half recipe was plenty for me. I did use less ginger and orange zest, and still found the orange a bit overpowering. I would probably omit it next time since I didn’t care for it too much with the beets. The dressing does smell really good as it’s warming up though! I warmed mine in a small pot on the stove. I put the carrots in with the beets during the last 5 minutes of cooking since I’m not a big fan of microwaved veggies.
