Ingredients
- 1 tablespoon olive oil
- 1 shallot, diced
- 1 (10 ounce) bag baby spinach leaves
- kosher salt and freshly ground pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Stir in shallots and cook until transparent, about 5 minutes. Add spinach, sprinkle with salt and pepper; cook and stir 3 to 5 minutes until leaves are wilted and reduced.

A simple and flavorful way to cook spinach. Comes together quickly and is a nice compliment to grilled fish, pork or chicken. The shallots don’t need 5 minutes to cook; 2-3 minutes tops. The spinach also doesn’t need the full 5 minutes. Take it off the heat as soon as it’s starting to wilt and it’s still looking a bit undercooked. The residual heat will finish cooking it perfectly!
It is better with butter instead of olive oil and a minced clove of garlic as well.
Superb – made per recipe and sprayed with a little vinegar before serving. The shallots added wonderful flavor. And I thought I didn’t like cooked spinach – this will be a regular vegetable for me from now on.
So easy,healthy and good. I saute in olive oil spray and add some garlic. Think I will do this tonight…my hubby loves it !
The shallots are a nice alternative to garlic. They added a nice flavor without the tendency of bitterness from garlic.
Didn’t have shallots so I finely diced sweet onion instead. Also used butter instead of EVOO just because I wanted that taste. Added some minced garlic as well but not too much to overpower the spinach. Super fast and easy. It was only two generous servings but darn good ones. A+.
It was good. Simple, easy and the family liked it. Nothing to write home about, but definately a good quick recipe if you need one more dish and have spinach in the fridge.
Great recipe and so simple. Very tasty and a great side dish. Just served it with grilled salmon. Hubby said he would have it again soon 🙂
This was a pretty nice veggie side dish. I made it exactly as written. I’ve only cooked with baby spinach once or twice before, and I’m always amazed at how the volume reduces so much. My store only sells 6-ounce bags of baby spinach, so I weighed out the proper amount in order to get the proportions right for this recipe. I should add this dish to my recipe repertoire.
Good, but next time needs something for a little extra kick. Maybe balsamic and lemon. I did add minced garlic, but it still needed more flavor. Dash of red pepper flakes, maybe?
Good, but yeah, keep in mind that spinach wilts to next to nothing.

I wanted something fast and easy but also healthy and this was the perfect side dish! I sauteed some shallots in a little olive oil with 1 garlic ( I love garlic). I then added 2 bags of fresh baby organic spinach. It took me mere minutes and it turned out delicious. Simple, tasty and healthy. I served this along with my salmon and shrimp tonight.
This was pretty good for plain spinach. I added fresh garlic with the shallot, but it still seemed to be missing something. Probably won’t make this again.
Simple and delicious! What else can I say…I would recommend disregarding the cooking time and only cooking the spinach until it’s just wilted. It’ll only take a minute or two.
This is one of my favorite ways to prepare spinach! My personal preference, is to add a couple of cloves of minced garlic to the pan along with the shallots. I also hit the pan with a splash of balsamic vinegar right before serving. The boyfriend likes this best when I top it with some grated parmesan, but it is equally delicious without!
I used onion, garlic and a bit if nama shoyu (raw soy sauce) for liquid to help it wilt faster. I served this with Lemon-Pepper Salmon II and it was restaurant quality.
I gave this 5 stars because I will make it again BUT is absolutely needs garlic! I used a sweet onion and with garlic this came out delicious, quick and easy.
Made it with garlic and mushrooms and my boyfriend couldn’t get enough!
Make sure you like the flavor shallots! It was too strong for me and I did not like this dish at all. I actually rinsed the cooked spinach to eat it so I wouldn’t waste it.
Simple and delicious. I’m going to try some minced garlic next time like others have suggested. As is , its yummy, fast and healthy. I ate half the recipe as lunch.
