Using fish, chicken, or even sliced cooked green bananas, you may prepare these zesty marinated veggies according to an old Spanish tradition. With chicken gizzards, I prefer it the most.

Ingredients

  1. 2 pounds chicken gizzards
  2. 1 large onion, diced
  3. 1 large green bell pepper, diced
  4. 1 medium head garlic, chopped
  5. 1 ½ cups white wine vinegar
  6. 1 cup corn oil
  7. 3 bay leaves
  8. 2 tablespoons black peppercorns
  9. ½ cup pimento-stuffed green olives
  10. salt to taste

Instructions

  1. Place chicken gizzards in a large saucepan and pour in enough water to cover. Simmer over low heat until tender, approximately 30 minutes.
  2. While gizzards are simmering, mix together onion, bell pepper, garlic, vinegar, oil, bay leaves, olives, and peppercorns in a large bowl. When ready, drain gizzards and mix into bowl. Season with salt to taste and marinate at least an hour in refrigerator.

I make this all the time. I buy it at stop n shop and for good size package $3.00 and that’s a good deal. I make it with bananas or without and I do without because my husband can’t have bananas due to CKD and he loves it over rice . They eat 3 dishes per person that’s how much they love it .

Although I do not eat this I have made it twice for the holidays for family and friends, and they all love it! I actually put my own twist to it with the seasoning..so this might make a big difference in the preparation. I wanted to add my own recipe on the app, but I have no clue on how to do it. Good luck!
