It’s really easy to prepare delicious mushroom rice in a casserole dish!

Ingredients

  1. 1 cup uncooked long-grain rice
  2. 1 (10.5 ounce) can condensed French onion soup
  3. 1 (10.5 ounce) can beef broth
  4. 1 (4 ounce) can sliced mushrooms, drained
  5. ¼ cup butter

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Combine rice, condensed soup, beef broth, mushrooms, and butter in an 8-inch square casserole dish.
  3. Cover and bake in the preheated oven for 60 minutes.

My mom used to make this all the time when I was growing up. She cooked it on the stove, so this is a bit different. I had to cook it for an hour on 350 and 30 minutes on 375. Turned out great!

Very tasty, very rich. I used two cans of chicken broth (same size) and added some dehydrated onion. Everything else the same. Next time, I would rinse the rice first, and use 1T less butter. Very happy to have a baked rice dish – easy to do. Thank you!

I have been making this since the 70’s. Its delicious & always a hit! I also brown pork chops or chicken and bake it on top of the rice for an easy one pan dinner.

I steamed some fresh mushrooms rather than using canned, otherwise, followed the recipe to the letter. Rice came out of the oven at 60 minutes, perfectly cooked and packed with flavor. This recipe takes no effort at all to make, and I was very satisfied with the way it turned out.

I used 2 of the boil in the bag rices (=1 cup rice) and added an extra cup of water. It was great and cooked in about 35-40 minutes at most!! Loved it and will make it again!

Delicious…thanks for posting. Did swap the soup for cream of mushroom as posted by another. I would imagine it would be great either way. Just a personal preference on my part. Thought it would make it creamier.
