Dinner tonight is quite quick, simple, and healthy. This is also a fantastic snack or starter. At first glance, there appears to be a lot of spinach, but as it cooks, it quickly becomes much less. If whole wheat tortillas are not available, other tortilla kinds may be utilized. Sour cream and salsa should be added.

Ingredients
- 1 bunch fresh asparagus, trimmed
- ½ cup pickled ginger, or to taste
- 1 tablespoon olive oil, or as needed
Instructions
- Preheat an outdoor grill for medium heat.
- Place asparagus on a sheet of heavy duty aluminum foil that is large enough to wrap completely around asparagus. Drizzle asparagus with olive oil. Place ginger on top of asparagus. Seal foil.
- Place foil packet on the hot grill. Turn after 5 minutes. Cook 5 minutes more, or longer if you prefer more well-done asparagus.

Simple and delicious as written! I love an easy grilled asparagus. The pickled ginger gave the asparagus excellent flavor but visually it was not appealing. Not sure if it was a reaction to the foil, what pickled ginger does when it is cooked, or the specific brand I used but it had a grey/purplish color and the texture was no good so I discarded it prior to serving. It still seemed to lack in the tartness I love in asparagus so I garnished with lemon wedges. Excellent and one I will make again!
