Easy Fried Cabbage

This dish is excellent and incredibly simple to make. The past 25 years, I’ve succeeded each year. Kids appear to adore it. The flavor of the rice is excellent.

Ingredients

  1. 2 tablespoons grapeseed oil
  2. 1 medium yellow onion, chopped
  3. 3 cloves garlic, chopped
  4. 2 teaspoons Cajun seasoning, or to taste, divided
  5. ½ red bell pepper, sliced
  6. ½ medium green bell pepper, sliced
  7. 1 medium head cabbage, thinly sliced
  8. 1 tablespoon butter, or more to taste (Optional)
  9. salt and ground black pepper to taste

Instructions

  1. Heat grapeseed oil in a large cast iron skillet over medium heat. Add onions and cook until softened, about 3 minutes. Add garlic, stir, and cook until fragrant, 1 to 2 minutes. Season with 1 teaspoon Cajun seasoning and stir to combine.
  2. Mix in red and green bell peppers; cook for 1 to 2 minutes Add cabbage, remaining 1 teaspoon Cajun seasoning, and stir to combine. Add butter and stir until melted. Simmer cabbage until it reaches desired softness, about 15 minutes. Season with salt and pepper.

This was soooo good! I’m avoiding fat, so I used maybe a half teaspoon of olive oil and a splash of dry white wine. Didn’t have any Cajun seasoning, so I used a sprinkle of red pepper flakes. I poured boiling water over the onion before I added it to the pan with the garlic. I have high blood pressure, so no salt, but I used some freshly ground pepper. I couldn’t get over how flavorful and delicious this turned out – and I will definitely be making it again!
