Easy Cheesy Potatoes

A terrific side dish for any barbeque, this. In a foil wrapper, potatoes are grilled along with peppers and onions. It grills on the same grill as your preferred main dish.

Ingredients

  1. 6 potatoes, thinly sliced
  2. 1 small onion, chopped
  3. ¼ cup chopped green bell pepper
  4. salt and pepper to taste
  5. ¼ cup butter or margarine
  6. 1 cup shredded Cheddar cheese

Instructions

  1. Preheat grill for medium-high heat.
  2. Coat one side of a piece of aluminum foil large enough to hold all the potatoes and vegetables with cooking spray. Place the potatoes, onion, and green bell pepper in the center of the foil, and season with salt and pepper to taste. Then place small pats of the butter or margarine over the vegetables.
  3. Carefully seal all the edges of the foil around the vegetables to form a packet. (Note: Double wrapping will help to prevent burning.)
  4. Place packet on the preheated grill, and grill for 20 minutes. Turn packet, and grill for 10 more minutes.
  5. Carefully open packet, check for tenderness with a fork. If tender, sprinkle the cheese over the vegetables and allow it to melt. Transfer to a platter, and serve with your main entree.

I used an oven with the foil packet sitting in a metal baking pan. 20 minutes on one side then 10 minutes on the other at 375 deg F. Potatoes still were not done. It took another 18 minutes in the microwave to get them perfect. My 81 year old mother said next time put them in the oven at 350 degrees F for one hour, then add the cheese for five minutes, stir and serve.

These are awesome! Sliced thin, added fresh minced garlic, used “Mama Mia’s Garlic Spread” (you should really try this stuff) for the butter called for and these turned out delicious! Will for sure make this again! Didn’t follow the cook time. I sliced them thin, but listened to them on the grill and they turned out great. Really good.

great base for lots of variations, from what veggies you add to what else goes on the grill. I don’t have perfect BBQ weather so I baked thin potato slices and the veggies in the oven in a closed casserole dish for about 30 min at 350, sprinkled asiago cheese on it and let it sit in the turned off oven for 5 more min to let it melt. Very tasty!

Awesome recipe!! I made them in the oven, and not the grill. Next time I make this recipe, I will half cook the potatoes in the microwave, or boil the potatoes… THEN put them in the oven, and add cheese after they’ve been cooked. Very yummy outcome!! 🙂

Thes cheesy potatos are the BOMB!There so good and very easy. Try cutting the butterr in half so it wount be as fatting. The best cheesy potatos ive evr made!

HOLY COW! These are delicious! My new favorite grilling recipe! I basically made this recipe as stated but inadvertantly some slight things made it better! I had some seasoned onions from precooking my chicken for the grill, used them.(Chipotle pepper and garlic flavored)I also used bacon grease to lube the foil instead of spray and I think that added flavor too! Try this, really easy and NO CLEAN-UP!

This was delicious!! I did have to substitute the shredded cheddar cheese for a Mexican blend shredded cheese, because that’s what I had on hand. Either way, they are scrumptious.
