Drawn Butter

A great accompaniment to broiled lobster tails or steamed king crab is this drawn butter. It is best made the previous day. Any butter that is left over can be frozen for later use.

Ingredients

  1. 1 pound unsalted butter

Instructions

  1. Melt butter in the top of a double boiler over barely simmering water, 5 to 7 minutes. Set melted butter aside to cool slightly, then skim foam off the top and discard. Allow butter to solidify, 8 hours to overnight.
  2. Drain off any liquid that is collected at the bottom. Transfer butter to a microwave-safe glass or ceramic bowl and microwave until melted. Pour into individual bowls to serve.
  3. To make lemon butter, place zest of 2 lemons in a bowl. Pour melted butter from step 2 over zest.

Super easy. Don’t even have to cool it off, just skim the solids off the top and don’t pour the white liquid at the bottom. Added the lemon zest too.

This is clarified butter, but there’s disagreement as to that is the “drawn butter” which should be used with lobster/seafood. Some authors insist that plain melted butter is the “drawn butter” to be used. Also, it is not the same as Ghee, used in Indian recipes, as one commenter suggested. Ghee is indeed clarified, but for much longer – about :30 – so that the browned solids in the bottom flavor the clarified butter/Ghee, and also that more water evaporates out of it.

This is basically clarified butter, you can also buy bottles of “Ghee” at specialty food stores, same thing
