This is an excellent vegan substitute. The lemon curd is jam-like and thick. This is fantastic to have on hand to spruce up a dessert or brunch. Excellent for making crepes, spreading on toast or biscuits, or dipping cookies in the curd.

Ingredients
- 2 tablespoons olive oil, or as needed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup quinoa
- 2 cups chicken broth
- 1 tablespoon curry powder, or to taste
- 1 tablespoon ancho chile powder
- salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium heat. Add onion and garlic and cook and stir for 2 minutes; add quinoa and cook and stir until lightly toasted, about 5 minutes.
- Pour broth into the pan and bring to a boil. Reduce heat and add curry and chile powders; cover and simmer until tender, about 25 minutes. Season to taste with salt and pepper.

I changed this recipe by adding 1/2 can of rinsed and drained chickpeas (per some of the comments on this recipe) because I just love chickpeas. However, even after I cooked it for over 35 minutes it was extremely mushy. I’ve made multiple quinoa recipes from Allrecipes.com and have been very happy with all of them. My favorite is Recipe #241071 (Best Greek Quinoa Salad). I make a batch of quinoa every week now and really enjoy it either as a main dish or side dish. I think this recipe failed because the chickpeas added too much moisture to the recipe. I was very bummed cuz I love curry. Unfortunately, I’m rating this recipe with 2 stars because I found the flavor rather bland. This might have been my fault cuz I cut the curry in half, but even that change would not (in my opinion) make the flavor so “bland/mild”. I’m still using Allrecipes.com as my ‘go to’ recipe site because of the contributions of my fellow cooks. The comments they contribute has made me a better cook. Thank you all so much!
I made per the recipe. This is REALLY good. For my taste, I am going to decrease amount of chili powder. Side Note: People should really review recipies as they are, not review what you decided to make it into by adding/subtracting 17 ingrediants!
I only had 1.5 teaspoons of curry powder and I used equal amounts of regular chili powder and garam masala. I added 1 lb ground beef, frozen kale, bell pepper, and juice from half a lemon at the end. I thought it was still bland at the end so added a few shakes of turmeric and coriander plus salt and pepper to taste. Ate with chopped mango, would be good with banana too! I was surprised even my 3 year old ate it after he had eaten the dinner I prepared for the kids and hubby!
This was a quick and easy weeknight dish. I made enough for 4 and added frozen butternut squash and peas. I also squeezed in some lemon while cooking and before serving–this really set off the flavors. I think it could use one more spice, not sure what. Overall, my family enjoyed this dish and I’d definitely make it again!
Easy to make and very tasty! I didn’t have ancho chili powder, so I used paprika and blended chili powder. It was good, but hopefully next time I’ll have the right one.
I found the recipe to have a very strong garlic taste, so next time, I’d just lessen the garlic cloves. I also added some vegetables like peas, green beans, and corn.
Honestly makes Quinoa oh-so-tasty! Serving was pretty generous and I wolfed it down! Made this for my mum on Mothers Day and she really liked it as well! I didn’t have any ground spice ready on hand so I just used 2 spoons of curry powder instead of the 1. Also only had half of an onion on hand. It worked well!
Fantastic! I only added 1/2tsp of HOT Chilli Pepper and it had a kick. I also added a can of Sweet Peas
It was tasty but a tad bland. I squeezed a tiny bit of lemon and added a splash of fish sauce to brighten it up a bit.
First try turned out great! I added some red bell peppers and it really added to the dish.
I add mixed veggies and chicken with less chilli powder. I double the recipe. I baked the chicken separately, then slice in small chunks and add it to the finished quinoa. Delicious. Add butter and seasoning salt for more flavour. Mmmm.
Easy to make. Flavorful. I made shrimp to toss in in, but would be good adding veggies and/or chicken too to make a complete meal.
Yes, I used 2 tlb of olive oil, and added about 1/2 cup of bell pepper, plus the small onion and 3 cloves of garlic. I did not use the chili powder and I only used 1 chicken bouillon with the 2 cups of water. It was very delicious. when eating, I did add a little salt and a tad bit of cayenne pepper. Very good. Thank you for sharing.

This is a tasty and easy way to serve quinoa. The flavors can be boosted or exchanged to suit your taste. It would also do well as a main dish by adding a diced protein and some chopped veggies.

Made this for my 9 month old daughter and boyfriend and they both loved. We are trying to find rice alternatives so this was amazing. I made it with slow cooked jerk chicken thighs.
This is a delicious dish, as is, yet versatile with whatever veggies you want to add! Also, you can add a meat, cheese or fresh herbs if you’d like. Leftovers good cold or warmed up! This is a keeper!
! tbl of curry powder and chile powder made this inedible!! I’d try it again but would cut back to maybe 1 Tsp of curry and chile powder to see what it would taste like. Even the photo shown makes the quinoa look a lot lighter in colour. Mine was very dark in colour.
Added peas and used a tablespoon of yellow curry, 1 can coconut milk! Yummy!!
