Ingredients
- ½ cup unsalted raw cashews
- ½ cup water, or more as needed
- ¼ onion
- 2 tablespoons olive oil
- 1 lime, juiced
- 2 cloves garlic, peeled
- ½ teaspoon dried basil
- salt and ground black pepper to taste
Instructions
- Combine cashews, water, onion, olive oil, lime juice, garlic, basil, salt, and pepper in a food processor or blender. Blend until completely smooth, 3 to 5 minutes. Add a little more water for a runnier dressing.
- We use lime juice, though I imagine lemon juice would work very well too.

I really like this recipe. I was looking for something vegan and without vinegar. Since I wanted it for a large group I double the recipe and made a couple of slight changes. I used a little less garlic and lemon juice rather than lime juice. Thanks a lot!!
