Creamed Spinach and Mushrooms for One

A quick and delicious way to eat your vegetables and enjoy them too is with this recipe. When I needed a side dish and wanted something more interesting than boring spinach, I came up with this recipe. The cheeses, mushrooms, and garlic offer a ton of flavor without adding a lot of calories.

Ingredients

  1. 1 teaspoon olive oil
  2. 2 cups baby spinach leaves
  3. 2 medium baby bella mushrooms, sliced
  4. ½ teaspoon garlic powder
  5. 1 pinch red chili pepper flakes
  6. salt and ground black pepper to taste
  7. 2 tablespoons grated Parmesan cheese
  8. 1 tablespoon reduced-fat cream cheese

Instructions

  1. Preheat a large skillet over medium heat. Add oil and heat until shimmering. Add spinach and mushrooms; cook and stir until spinach is almost completely wilted and mushrooms are cooked, 3 to 4 minutes.
  2. Add garlic powder, pepper flakes, salt, and pepper; stir to combine. Add Parmesan cheese and cream cheese and stir until completely incorporated.
  3. The chili flakes are optional but give this side dish a spicy kick. Adjust the amount to your tastes.

Perfect for one person! Quick, easy, versatile easily combines with other ingredients (e.g., peppers: bell, hot, onions, sliced garlic chips, cubed ham, fried egg as a topper) or not. Choices are good. Made this following the recipe. Really good and tasty. Then the experimenting began. So far so good.
