Ingredients
- 1 pound baby red potatoes, quartered
- 1 cup shelled English peas
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup milk
- salt and pepper to taste
Instructions
- Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 to 20 minutes. Drain.
- Meanwhile, bring a medium saucepan of water to a boil; add peas and simmer until just tender, about 6 to 7 minutes. Drain and set peas aside.
- Add butter to the same saucepan; melt over medium heat. Stir in flour to make a thick paste; gradually whisk in milk, stirring constantly until slightly thickened. Season with salt and pepper to taste. Add potatoes and peas; simmer, stirring often, until potatoes are heated through, about 5 minutes. Serve immediately.
- One pound of fresh peas in pods is equivalent to about 1 cup of shelled peas.

I made this recipe in my slow cooker. Less pots and utensils to wash. No boiling hot pots of water to handle. I added some cream with the milk. Makes a delicious white sauce for bread dipping.

Want to take this recipe from Wow to WOW? Use half sweet potatoes and half red potatoes. I cooked my potatoes in salted water just until barely tender. I doubled the sauce and added a bit of sugar to it and cooked it down a little thicker. I also added more peas.. because I love peas! I used frozen peas and just added them to the drained potatoes, then I added the cream sauce. PERFECTION!
My aunt used to make this when we used to visit her in Idaho. I told my wife I was looking for something to make for dinner and I saw I had peas and red potatoes and this came to mind. My kids loved it and they were all satisfied! I love this recipe!
Very yummy! I didnt weigh my potatoes so may have had more than a lb but i ended up doubling the sauce and added quite a bit of salt and pepper and some garlic

This is a good, basic recipe that has spanned the generations. When fresh peas are out of season, I just add frozen peas to the boiling potatoes 4-5 minutes before the potatoes are done. Good stuff.

Made this tonight and it was wonderful. I mostly followed the recipe exactly but added 1-2 tbsp chopped onion sauteed in the butter + an extra tbsp, a little s&p, and a sprinkle of turmeric, and a small amount, 1/2 tsp minced garlic. Lovely! Judi D.
This is a perfect side dish! So simple and tasty! I added a dash or two of paprika to this sauce and wouldn’t have changed a thing!
Made it according to the recipe, though I did add a shallot and a little bit of garlic. Very adaptable to whatever you have. You just can’t beat a good white sauce. Very yummy and traditional. Thanks for the recipe!
