Ingredients
- 1 cup white sugar
- 1 cup water
- 2 ½ cups fresh cranberries
Instructions
- Dissolve sugar in water in a saucepan over medium heat. Add cranberries and simmer on low until cranberries have softened but before they begin to pop, about 15 minutes. Cool, strain, and refrigerate.

this does make a cranberry simple syrup.it is easy to strain and you end up with no seeds or skin pieces and a very smooth simple syrup. if you let the cranberries open too much (or mash the cranberries ) the pectin will come out and you will end up with more of a jam or jelly/sauce (however you will get a better cranberry flavor) it is also difficult to strain and you will end up with a thick syrup/gel that is packed with flavor. either way this recipe needs some lemon juice to bring back the tartness that cranberries have that tartness is lost with the sugar. dont forget the lemon juice!
