Ingredients

  1. 1 pound red potatoes
  2. 1 pound Yukon Gold (yellow) potatoes
  3. 1 fresh jalapeno pepper, sliced
  4. 12 ounces baby carrots
  5. 4 cloves garlic
  6. 1 (10 ounce) package frozen white corn, thawed
  7. ¼ cup butter
  8. ½ cup shredded Cheddar cheese
  9. salt and pepper to taste

Instructions

  1. Place red potatoes, yellow potatoes, jalapeno pepper, carrots and garlic cloves in a large pot. Cover with water, and bring to a boil over high heat. Cook 15 to 20 minutes, or until potatoes are tender. Drain water from pot.
  2. Stir in corn and butter. Mash the mixture with a potato masher until butter is melted and potatoes have reached desired consistency. Mix in cheese, salt, and pepper. Serve hot.

I don’t put garlic in anything, otherwise this could be a decent recipe. For my smashed potatoes ole I add carrots, corn and onions and then do a coarse smash. Two Tbs butter is plenty with sour cream if available. Precook the carrots and onion in the microwave then add to the pot with the potatoes.

I love this recipe!! My whole family comes running when I make it too. Couple changes though I use 5lbs of red or gold whichever I have or is cheaper. Then I use a big bag of mixed vegetables. And I top with country gravy. These taters are legit! Thanks for sharing.

Good concept, but could’ve used more potatoes, or just less everything else. I added 10 ounces of peas as well, but boy there were not enough potatoes. Maybe I just like potatoes too much lol. I would however allow for a lot more time to boil the potatoes as it took double-triple the amount of time for me at max heat even.

Like others I was a little hesitant to make this for a family gathering. Boy was I surprised…. it was very easy, very flexible for ingredients and very popular. I will definitely use this one again and just change up the veggies. I usually make mashed potatoes and add sautéed spinach or chard. This was a very nice change.

If I could possibly gives this more than 5 stars I would. The only thing i change is to omit the jalapeno just because of a personal preference. this is one of my go tos for mahed potatoe dish when I don’t have gravy. Thanks for sharing this one.

After another reviewer noted that the picture shows peas, but peas were not included in the recipe, I added some peas (I feel the corn and peas should’ve been cooked at least a little in the boiling water, and not just have the thawed veggies added to the drained potatoes and carrots). I found the recipe bland, and while it was not bad, it’s not a recipe I’m adding to my collection.

i was pleasantly surprised at how this turned out.. i was looking for a healthier side dish for bf’s dinner and found this.. next time i’d double the garlic or leave it raw and crush it in to give the potatoes a bit of a kick.. i made a few modifications but think i stuck to the recipe’s intention: used all russets, subbed pickled jalapeno that i chopped up for the fresh and threw it in at the end.. used a combo of yellow corn and peas for the white corn.. and lastly used margarine for the butter.. i also added a bit of unsweetened coconut milk to give it more of a creamy consistency.. i know bf is going to love this.. ty for the recipe

This dish is excellent and so easy to prepare! However, don’t make the same mistake I did and use super sweet corn! The sweetness was too overwhelming for some in my family.
