Ingredients
- ⅓ cup shortening
- 6 large potatoes, peeled and cubed
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
Instructions
- Heat shortening in a large cast iron skillet over medium-high heat. Add potatoes and cook, stirring occasionally, until potatoes are golden brown. Season with salt, pepper, garlic powder, and paprika. Serve hot.
- You may use oil instead of shortening if desired.

I too would add onions I love onions. I add onions to just about any casserole . To the person who said peeling the potatoes is time consuming . I don’t peel,potatoes ever! Does save a lot of time energy, work and preserves the vitamins and minerals. There is little to no difference in the finished product! And soooo much easier and faster than all that time in peeling potatoes!
Can’t go wrong with fried potatoes. I doubled the recipe and added some more spices(Italian spices, cayenne pepper, smoked paprika) and used oil. It was a great side to go with my crockpot bbq chicken.

Wonderful but one thing missing. A big yellow onion sliced and generous shake of black pepper to taste. Make sure grease is hot before adding potatoes and onions and don’t turn until fried crisp.

I used olive oil instead of lard because well I’ve never cooked with lard in my life but came out great.
Good, but I made some changes. I didn’t use that many potatoes, and used garlic paste instead of powder. I also used bacon grease and some olive oil instead of shortening. They took a bit longer to cook than here, but came out great. I also added some pepper flakes and Lowrys seasoned salt.

Thank you for this recipe. Finally! I have made a decent batch of fried potatoes. So tasty and easy to make. Love it! But I may be in trouble now because fried potatoes are my weakness and now I know how to fix them I might eat them too much.

So good! I used Garlic Sriracha and black pepper and just fried them in a little Olive oil instead of shortening. They came out perfectly!

This is a lovely side dish to compliment any meal. I started mine off in a cast iron skillet on the stove top, then transferred the skillet to the oven. Creamy interior, crunchy exterior…yum!

I add a pinch of cinnamon to the potatoes at the end. Got that twist/trick from the deli of my grocery store. Yum!
Yes I have made this multiple times. I spice it up a bit. I add a Jalapeño pepper, grilled onions, grilled garlic, bell peppers, and cilantro. I add bacon or sausage and place a fried egg on top. My family loves it and requests it often.
I precut my potatoes and added orange pepper. I mixed my spices in a little bowl and left it out with instructions for my husband. It was delicious! Very easy. Will for sure make these again!
I thought they were perfect. My husband (who is extremely picky and loves the way we usually make potatoes) loved them and asked me to make them again sometime. The kids loved them, too! Perfect amount of spice. 🙂
They were great in an iron skillet with oil or shortening. Come out crispier with the shortening of course and I add onions from time to time.
