Cottage Cheese Souffle

Ingredients

  1. 4 eggs
  2. 6 ½ tablespoons whole wheat flour
  3. 1 teaspoon baking powder
  4. 1 pinch salt to taste
  5. ½ teaspoon minced garlic, or to taste (Optional)
  6. 1 pinch crushed red pepper flakes, or to taste (Optional)
  7. 1 pinch ground nutmeg, or to taste (Optional)
  8. 2 ¼ cups cottage cheese
  9. 1 (8 ounce) package shredded Cheddar cheese
  10. 5 slices bacon, finely diced

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9×9-inch baking dish.
  2. In a large bowl, beat the eggs, and slowly whisk in whole wheat flour, baking powder, salt, garlic, red pepper flakes, and nutmeg. Mix in the cottage cheese, Cheddar cheese, and bacon. Transfer the mixture to the prepared baking dish.
  3. Bake in the preheated oven until the top is browned and crispy, and a toothpick inserted into the center of the souffle comes out clean, 55 minutes to 1 hour.

I made half of the recipe but used the 5 slices of bacon. I upped the amount of salt and added black pepper. I baked mine in my Cuisinart Air Fryer Oven (which runs hot) and it was ready in 30 minutes. A delicious way to use up cottage cheese.

I have made this recipe and my mouth was HAPPY! Next time to add a twist I am going to add a small amount of corn and some green chiles….. Yum!!

this is an interesting recipe but as i m not a bacon fan i switched over to chicken bologna slices,i omitted nutmeg as it was not ready in hand,hope this little twist adds to your taste as well…….
