Copycat Chipotle Cilantro Lime Brown Rice

When my son was born over 13 years ago, I first experienced this. I received this dish from my talented cook brother. It is an easy dish that can be made ahead and refrigerated.

Ingredients

  1. 4 cups water
  2. 2 cups brown rice
  3. 1 lime, juiced
  4. 1 teaspoon minced garlic
  5. 1 teaspoon extra-virgin olive oil
  6. 1 teaspoon sea salt
  7. ½ cup chopped fresh cilantro

Instructions

  1. Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 30 to 45 minutes.
  2. Transfer cooked rice to a large serving bowl and cool slightly, 5 to 7 minutes.
  3. Whisk together lime juice, garlic, olive oil, and salt in a small bowl; stir into rice. Fold in cilantro.

I read the reviews before I made it and I added a little avocado oil before I cooked the rice and it did not stick together like some people have said. I did not soak it for 15 minutes before cooking, but I will try that next time to see if it’s even less sticky. Flavor was excellent!

Just an FYI, at Chipotle they mix in milk with their Cilantro Rice. I know milk sounds strange, but I have watched them do it multiple times. When I asked about it, they said it helps the rice not stick together and adds moisture.

It was outstanding!! I used Jasmine Rice my favorite and I added just a little extra cilantro than it called for, why you might ask, because cilantro makes everything taste better.

Super easy and great tasting! I did not add the recipe amount of cilantro. I made another recipe from this site last night that called for a half a cup of cilantro, the cilantro overpowered the entire dish. Live and learn! Thank you for the recipe.

Like others, I made this exactly how the recipe says and it was too gluey. To fix that, next time I will rinse the rice first, add a little of Avacado oil to the water and let it sit for 15 minutes before I cook it. This is how my white rice recipe tells me to make it and it always turns out wonderful. It does make a lot, but I love leftovers. I loved the taste of this and will be making it again!

I made this with Mahatma Jasmine rice in my instant pot. 1:1 rice to water. It was amazing! The rice was tender but every grain was separate from each other. Then I tried it with a varying amount of lime zest and it got even better!

Made it tonight to go with honey garlic chops. Hubs really liked it. I had a little mishap when I was putting in the like juice. My hand shook and the like fell over the edge of the spoon, so there was a lot more juice than the recipe called for. Lol That was on me though. Regardless, it was good. Just a little less lime juice next and it will be perfect.

when I made the rice, I combined what this recipe called for and a few other recipes. First, the ration of 2 to 1, so 2 cups of water to 1 cup of rice worked perfectly. The trick is to not stir the rice at all and even let it sit for a few minutes. At first, I thought it was lacking flavor, so I added like 1/4 more of lime juice, more garlic powder, salt and pepper. I think what really boosted the flavor was when I added some Adobo. Overall, pretty good recipe to start, definitely needs some tweaks.
