This is a fantastic opening. You may let it cook and serve it with a plate of rice, or you can add a little more water to it to make it more like a soup.

Ingredients

  1. ½ cup lentils
  2. 1 ½ cups water
  3. 1 small tomato, chopped
  4. 1 small onion, chopped
  5. 2 teaspoons ground cumin
  6. 1 teaspoon salt
  7. 1 tablespoon vegetable oil
  8. 2 small yellow potatoes, cubed

Instructions

  1. Combine the lentils, water, tomato, onion, cumin, salt, and vegetable oil in a pot over medium heat; bring to a boil. Cook and stir at a boil until the lentils are soft, about 30 minutes. Add the potatoes and cook until the potatoes are tender, about 15 minutes more.

I added another half a cup of water. I used cherry tomatoes that were very small in this recipe. I used one and a half teaspoons of cumin. I combined the lentils and the potatoes while I was cooking for 45 minutes. Yum yum I love this recipe I’m definitely making it again.

Used my instapot doubled all ingredients added 3 c of chic broth and 2 c of water added 1/2 c corn 1/2 c chopped red pepper set on soup mode came out perfect … will make again

Great flavor and consistency. I used a can of Ro-Tel fire roasted tomatoes and chilis and vegetable stock and added hot sauce at the table. Delicious!

Husband (from Colombia) likes it! I added cilantro, next time will add a dash more salt, a bit of pepper and I’ll put the potatoes in sooner so they cook through a bit more. Solid base, especially since no meat!

Love this recipe!! Made it a little spicy with some habanero pepper and red pepper flakes! Didn’t have potatoes so I used more veggies (corn, peas, carrots etc) added chopped celery and topped it off with some crispy bacon and fresh basil Definitely making this again in my slow cooker!

Yummy and simple! The only things I changed were using canned petite diced tomatoes and adding 2 large cloves of garlic (for a double batch) as recommended by other reviewers. This will be going on my “make often” list because it was so easy and tasty!
