Chef Bill’s Green Bean Almondine with Cranberries

This delicious side dish features green beans, cranberries, and almonds mixed with brown butter and topped with a squeeze of orange juice. Serve heated with your preferred meat.

Ingredients

  1. 1 tablespoon butter
  2. 1 cup green beans
  3. ½ teaspoon garlic powder, or to taste (Optional)
  4. salt to taste
  5. 2 tablespoons sliced almonds
  6. 2 tablespoons sweetened dried cranberries (such as Craisins®)
  7. 1 splash orange juice
  8. ground white pepper to taste

Instructions

  1. Heat butter in a small skillet over medium heat until it starts to brown and smell nutty, 3 to 5 minutes. Add green beans, garlic powder, and salt; cook and stir until beans are tender, about 2 minutes.
  2. Add almonds and cranberries; toss lightly to combine. Add orange juice and season with white pepper.
  3. You can substitute 1/4 teaspoon minced fresh garlic for the garlic powder and either lime or lemon juice for the orange juice.

This was great but I changed it slightly. I blanched the beans in water and orange juice first. I also simmered the dried cranberries in OJ and water to plump them up. I drained the cranberries, and threw them in the pan at the last minute. I didn’t throw a splash of OJ on last, but the OJ flavor really stayed in the beans and craisins, and the combo was delicious.

I also soaked the cranberries in hot water for five minutes before adding, and it made them juicier. Used lemon juice instead of orange. Will make this again!

I made it twice. I did boil the beans for a bit to soften them. Every time turned out great. I did leave out the oj . We love this recipe. Thank you. Will use as a side often

Since I was making this for a crowd, I adjusted the ingredients as I had at least four times the amount of green beans. I only used about 2/3 of the garlic powder and reduced the butter to two tablespoons. It still turned out great and I came home with an empty bowl. Will definitely make it again.

I made it for Thanksgiving, and unfortunately used frozen green beans that were kind of mushy and flavorless. Next time I’ll use fresh green beans and steam them until they’re almost done before adding them to this recipe. The recipe itself is tasty; it’s a lighter and fresher taste than the traditional green bean mushroom soup casserole. The orange juice and cranberries add a nice tart/sweet complement to the dish. I also added a little bacon to the dish which was good, but not necessary. I might add a little corn starch to the liquid in the pan so that the sauce clings to the beans more, sort of a glaze.

Great recipe. I used lime juice rather than orange juice. It worked fine. I think any citrus would work well. I also added some mushrooms and fresh garlic but otherwise followed the recipe. Served with baked wahoo and mashed potatoes. It’s easy and yummy.

Made this last night and it was a hit! These beans finished ahead of the rest of the meal, so I popped on a lid and let the cranberries absorb the OJ fully. Delish!

so much yum! i needed a quick veggie dish, had some french beans on hand and made this in about 7 minutes. i loved it! didn’t have any orange juice so i skipped it, but the craisins provided just the right tiny bit of sweetness! love the flavor and how fast/easy it was to make!
