Cheesy Spaghetti Squash Bowl

Although I generally associate spaghetti squash with winter, it is a delicious dish all year long. This microwave-safe side dish is a great way to save time and is filled with delicious veggies and cheese. Excellent when served as a side to lemon-grilled chicken or on top of pasta with garlic and a fine wine. There are no limits to your options, so go to work and enjoy yourself!

Ingredients

  1. 1 (3 pound) spaghetti squash, halved and seeded
  2. 2 medium plum tomatoes, finely diced
  3. ½ cup shredded mozzarella cheese
  4. ¼ cup chopped fresh cilantro
  5. 2 ½ tablespoons grated Parmesan cheese (Optional)
  6. kosher salt and freshly ground black pepper to taste
  7. 1 dash hot pepper sauce (such as Frank’s RedHot®) (Optional)
  8. 2 tablespoons grated Parmesan cheese, or to taste (Optional)

Instructions

  1. Pierce squash several times with a fork and place on a microwave-safe plate.
  2. Microwave on High for 5 minutes. Turn and continue cooking until soft, about 5 minutes more. Let stand for 5 minutes.
  3. Cut squash in half lengthwise and remove and discard seeds. Using a fork, scrape insides of squash to form strands and place in a large bowl; reserve skins.
  4. Add tomatoes, mozzarella cheese, cilantro, and 2 1/2 tablespoons Parmesan cheese to squash; mix to combine. Season with salt and pepper. Spoon mixture into spaghetti squash shells and microwave on HIGH until heated through, about 2 minutes .
  5. Top with hot sauce and remaining Parmesan cheese.
  6. If you are figure-friendly conscious, you can substitute low-fat Parmesan and mozzarella.
  7. Parsley can be used in place of cilantro, if preferred.
  8. You can also use cherry tomatoes instead of plum tomatoes.

It was good. It was also quite filling. I substituted Ragu Six Cheese tomato sauce for the tomatoes. I did not add the hot sauce.

Will definitely make again! Chopped up one regular tomato, used shredded parmesan along with the mozzarella. Delish!

The squash was way underdone, crunchy and tasted raw – totally inedible. I have a high wattage microwave, and it was an average size squash.

I really enjoyed this – I baked the spaghetti squash in the oven and used gruyere instead of mozzarella cause that’s what I had at hand. I ate it as a vegetarian main
