Ingredients

  1. 1 (11 ounce) can whole kernel corn, drained
  2. 1 (11 ounce) can cream-style corn
  3. 1 (8.5 ounce) package dry corn bread mix
  4. 1 (8 ounce) container sour cream
  5. 1 cup shredded Cheddar cheese, divided
  6. 1 small onion, diced
  7. 1 large egg

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
  2. Combine whole corn, cream-style corn, dry cornbread mix, sour cream, 3/4 cup Cheddar cheese, onion, and egg in a large bowl. Mix until well combined, then pour into the prepared dish.
  3. Bake in the preheated oven for 25 minutes. Sprinkle with remaining 1/4 cup Cheddar cheese. Continue baking until cheese is melted, about 20 minutes.

I would not use Jiffy cornbread mix for this recipe. Too much sweetness takes away from the corn & cheese flavor. Unfortunately that’s all I had on hand l. Betty Crocker brand works better with just a touch of sweet.

I made this recipe exactly as directed. It didn’t set up. It turned out more like a spoon pudding sort of like a underdone bread pudding. It Tate’s good so will still have it with my chili but wouldn’t recommend it. Sorry.

I love corn casserole, & this did not disappoint. I doubled it, but only had 1 can of creamed & 14 Oz of sour cream. And didn’t measure the cheese…just did a couple handfuls in the casserole, then thoroughly sprinkled the entire top with cheese halfway through. Was delicious. I took it to a youth group supper for my kids, and the teens scraped the dish clean. Will definitely make again!

I used one can of drained whole kernel corn, one can of creamed corn, 2 cans of drained Fiesta Style corn, one egg, cream cheese instead of sour cream, steak seasoning, Zatarain’s Jalapeño Cheese corn bread 12.5 oz? and doubled the cheese.
