Here is a recipe I modified for mashed sweet potatoes that I got from a website on plank grilling.

Ingredients

  1. ½ teaspoon butter
  2. 5 sweet potatoes
  3. 2 tablespoons butter
  4. 2 tablespoons grated Parmesan cheese
  5. ¾ cup plain yogurt
  6. ½ bulb roasted garlic, minced
  7. 1 untreated cedar plank, soaked in water for 2 hours
  8. 1 tablespoon melted butter
  9. salt and black pepper to taste
  10. 1 tablespoon chopped fresh parsley
  11. 1 tablespoon chopped onion
  12. 1 pinch paprika
  13. 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat an oven to 350 degrees F (175 degrees C). Rub the soaked cedar plank with 1/2 teaspoon of butter.
  2. Use a paring knife to pierce the sweet potatoes in several spots to a depth of 1/2-inch. Cook the sweet potatoes in a microwave on High until soft, 8 to 10 minutes. Peel the potatoes, and place into a mixing bowl. Add 2 tablespoons butter, 2 tablespoons Parmesan cheese, the yogurt, and roasted garlic. Mash until smooth. Mound the potatoes onto the cedar plank.
  3. Bake in the preheated oven until a golden brown crust forms on the potatoes, about 30 minutes. Drizzle with 1 tablespoon of melted butter, and season with salt and black pepper to taste. Sprinkle with parsley, onion, paprika, and the remaining 2 tablespoons Parmesan cheese to serve.

Neither my son or I liked this, and he normally likes sweet potatoes. My husband said it wasn’t bad. Kind of a lot of work for basically glorified mashed sweet potatoes.

Interesting serving platter and delicious side dish all in one! With smoked paprika subbed for regular, this was delectable as a side with grilled turkey.

Well i have to say, when I pulled this out of the oven, I thought this was going to be a big flop. But my family raved on and on about it. I had to make a few changes though, no ceder and used vanilla yogurt.
