Ingredients

  1. 1 large head cauliflower, broken into small florets
  2. ½ cup butter, melted
  3. ¼ cup grated Parmesan cheese
  4. ⅔ cup Italian seasoned bread crumbs
  5. 1 pinch salt
  6. 1 teaspoon crushed red pepper flakes
  7. 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring 2 inches of water to a boil in a medium saucepan. Add cauliflower, cover, and cook for about 10 minutes. Drain, and place in a 2 quart casserole dish.
  3. In a small bowl mix together butter, Parmesan cheese, bread crumbs, salt, and red pepper flakes. Sprinkle mixture over cauliflower, and top with Cheddar cheese.
  4. Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.

I parboiled cauliflower florets til al dente. Made sauce, using 2 packs Hollandaise sauce (follow directions), added fat free Greek yogurt, cream cheese, cheddar cheese and crushed red pepper! Topped with panko bread crumbs! #YUM

Too many bread crumbs, and red pepper flakes just didn’t seem to be a good addition for cauliflower.

This is part of my regular dinner rotation. I’ve tried it several ways, but found best results by having equal proportions of breadcrumbs and parmesan. Also, I layer the steamed cauliflower and dry mix in the baking pan, then drizzle the melted butter on top. Depending what I have on hand, I sometimes make this with half cauliflower, half broccoli and that ALSO tastes delicious. When I make this, I don’t need a “starch” to complement meat or fish – this rounds out the plate quite nicely.

This was super yummy and super easy! The only thing I would change is the red pepper flakes, but that is a personal thing. I don’t eat spicy food very often but my 27 year old daughter loved it and found it a welcome splash of flavor. It does look like it would just be an average blandish dish, but the kick is really a great surprise. I am just getting to that age where the kick really kicks! This is really a good way to ‘spice’ up your dinner just a bit. Enjoy!

The flavor was good but it needed a creamer cheese sauce. For the left overs I made a basic cheese sauce to mix it in.

Here’s what I changed: I mixed all the ingredients together except for the bread crumbs. Then I put the bread crumbs on top and drizzled with butter. This allowed for a crisp top (which would not happen if the cheese were on top). In addition I mixed in a few spoons of sun dried tomato pesto. Delicious.

Although I love spicy foods, I would cut the red pepper in half. I also only used a few tbls of butter. Browned it under the broiler for a min after cooking time.
